Fiery hot fried fowl something to crow about at Virginia Beach’s CM Chicken

At CM Chicken, classic Korean fried chicken comes in a number of varieties, with several sporting chili pepper icons next to their name on the menu to alert diners of their level of spiciness. Growing up in the American South, fried chicken was more than a meal — it was a way of life.
My grandmother, who raised me from infancy, would put a spoonful of lard in her cast iron skillet and heat it until bubbling hot while she broke down a whole chicken, dredging the pieces in flour seasoned with salt and pepper. The pieces would pop and sizzle in the fat, turning golden, brown, and delicious.
If there were pieces left over, they were great cold-from-the-fridge the next day for a simple lunch, served with a slice of white loaf bread.
But there’s more to fried chicken than the traditional ways done in these parts, such as Korean fried chicken.
CM stands for Choong Man, and the Virginia Beach location is one of several across the commonwealth, and a few places outside the state, that serves up yardbird in the Korean style.
THE EAT: RED HOT PEPPER FRIED CHICKEN, WHOLE, $23
Frying chicken has been practiced in Korea for some five centuries, often served with a sassy seasoning. For the past five decades or so, modern techniques and use of spices have made various styles of chicken — sometimes referred to as “chikin” — widely popular, not just in the Asian nation, but in the United States as well.
Hallmarks of Korean fried chicken are a crunchy but delicate exterior embellished by spicy and sweet elements. The Smithsonian calls the dish a “ubiquitous staple” of the nation.
At CM Chicken, the classic dish comes in a number of varieties — with several sporting chili pepper icons next to their name on the menu to alert diners of their level of spiciness.
My dining partners and I picked the offering with three chilis next to the name: Red Hot Pepper Chicken. Available as drumsticks, tenders, wings, or a whole chicken, we picked the latter, which was broken down into pieces and filled two platters.
Each piece, addictively crunchy on the outside, and moist and tender on the inside, was tossed in a house-made gochujang sauce.
Gochujang sauce is dark red, and highly flavorful. Named after a village in South Korea, it’s an ancient recipe that starts with a thick paste of red chili powder, other peppers, and other ingredients like glutinous rice powder and powdered fermented soybeans. There is an underlying sweetness, and profound umami. The heat is real.
We also ordered Soy Tikkudak, fried-then-baked chicken tossed in a sweet and savory soy-garlic glaze, which I’ll report on in a future column.
The dish was delish. The chicken was cooked perfectly, and the sauce was a beautiful, albeit spicy, addition. The three of us ate our fill, and still had pieces left to take home and enjoy the next day.
A side order of coleslaw, which was crunchy and creamy with clean flavors and an underlying herbaceousness, was a wonderful, cooling foil to the fiery chicken. Classic french fries were also a nice add-on.
THE DRINK: KOOKSOONDANG MAKKOLI
Many think of rice wine as sake, but there are other offerings, such as Kooksoondang’s Makkoli, a creamy, somewhat sweet, milky offering. Available in cans at CM Chicken, this fermented rice imbibe from the noted Korean brewery is rich and refreshing.
The wine is a lovely, perfect accompaniment to the chicken, especially spicy chicken, cutting any fattiness and heat.

Side dishes are served in advance. Both the vinegar-based coleslaw ($4.99) and the off-menu pickled radishes help to cut through the richness of the chicken. And the Korean concept of chimaek (hot chicken with cold beer) is taken seriously here, with pre-frosted mugs to hold an array of Korean beers or Platform Beer Co.’s Haze Jude IPA ($8).

The onion dishes, some of which are listed under “Snow” on the menu, are memorable. The Snow Onion Wings ($16.99) include a mountain of cool, thinly sliced onions in a thin, mayo-based dressing that creates a tangy glaze on the unadorned wings. (When asked about ingredients, the owner shared that the sauce was shipped from Korea and mixed onsite.)

This place is great! I am a BIG fan of Korean Fried Chicken, and Choongman does it so well. We got an order of Snow Onion wings, Red Hot Pepper wings, and fried calamari between three people. We did dine-on on a weekday afternoon so service was quick! Shout out to Allison for being a great server :) Everything came out fresh, crispy, and piping hot. My personal favorite was the snow onion wings, the wings were juicy and the sauce on top was tasty! If you like spice, you will like the red hot pepper wings, because those were pretty spicy! The amount of food was just right for the three of us. I also like that each table has plenty of napkins and food-grade gloves to eat with so you don't get your hands dirty. Great service and tasty food, I would come back for sure :)
