Santa and Mrs. Claus took time away from their vacation to make an appearance at the Downtown Appleton Farm Market on Sat., July 27, 2024. It was Christmas in July! 🎅🏻🤶🏻
Now is as good of a time as any to remind you to save the date for the 54th Downtown Appleton Christmas Parade on Tues., Nov. 26, 2024.

Taco Cupcakes 🌮🧁
A delightful combination of cornbread and taco flavors in a bite-sized treat!
Ingredients:
1 lb ground beef, cooked and seasoned with taco seasoning
Cornbread mix, prepared according to package instructions for cupcakes
1 cup shredded cheddar cheese
Sour cream, for topping
1 large tomato, diced
Chopped green onions, for garnish
Chopped cilantro, for garnish
Instructions:
1️⃣ Prepare the Cornbread Base:
Preheat your oven to the temperature indicated on the cornbread mix package.
Prepare the cornbread mix according to the package instructions.
Pour the batter into a muffin tin to create cupcake shapes.
Bake until they’re firm but not fully cooked, about 10-12 minutes (adjust based on your cornbread mix instructions).
2️⃣ Add the Beef Filling:
While the cornbread cupcakes are baking, cook and season your ground beef with taco seasoning.
Once the cupcakes are nearly done, remove them from the oven.
Use a spoon to scoop out the center of each cupcake, creating space for the filling.
3️⃣ Spoon in the Savory Goodness:
Fill the hollowed-out centers of the cornbread cupcakes with the seasoned, cooked ground beef.
Be generous with the filling to ensure every bite is packed with flavor.
4️⃣ Top with Cheese and Bake:
Sprinkle a generous amount of shredded cheddar cheese over the beef-filled cupcakes.
Return them to the oven and bake for another 5-10 minutes, or until the cheese melts and starts to bubble.
5️⃣ Garnish and Serve:
Once out of the oven, top each taco cupcake with a dollop of sour cream, diced tomatoes, chopped green onions, and fresh cilantro.
For an extra indulgent twist, add a dollop of guacamole on top.
BLACK BEAN CORN SALAD

1 can of black beans
1 can of corn
1 c chopped tomatoes
1/4 diced red onion
2tsp fresh lemon juice
1 TBSP Apple cider vinegar
1/2 c green pepper
1/2 tsp kosher salt
2 TBSP fresh parsley
Toss and served over shredded chicken, canned chicken, or tuna.
Whip up a delicious meal in no time with our Steak Stir-Fried Ramen recipe! Juicy steak, savory sauce, and perfectly cooked noodles create a mouthwatering dish that’s perfect for busy weeknights.
Ingredients:
• 10 oz thinly sliced steak
• 2 tbsp vegetable oil
• 1/2 cup soy sauce
• 1/2 cup water
• 1 tbsp cornstarch
• 2 tbsp sugar
• 1 tsp sesame oil
• 2 packets of ramen noodles, seasoning packets discarded
• 1 green onion, thinly sliced for garnish
• 1 tsp sesame seeds for garnish
Instructions :
1. Prepare the Marinade:
• In a small bowl, mix together soy sauce, water, cornstarch, sugar, and sesame oil until smooth. Set aside.
2. Cook the Steak:
• Heat vegetable oil in a large skillet or wok over medium-high heat.
• Add thinly sliced steak and cook until browned, about 2-3 minutes per side.
3. Add the Marinade:
• Pour the marinade over the cooked steak, stirring continuously until the sauce thickens and coats the steak pieces, about 2 minutes.
4. Cook the Ramen Noodles:
• Meanwhile, cook the ramen noodles according to package instructions, then drain and set aside.
5. Combine Everything:
• Add the cooked noodles to the skillet with the steak and sauce.
• Toss everything together until the noodles are well coated and heated through.
6. Serve:
• Serve the stir-fried ramen garnished with green onions and sesame seeds.
Olive Chips! Now here’s an idea! Line the bottom of a muffin tin with a little bit of Mexican blend bagged cheddar, then add on some chopped olives, then add a little bit more Mexican blend cheddar on top of that. Bake at 400 for about 12 to 14 minutes until the edges are crispy. They pop right out of the pan to create these delicious crispy little Olive Chips.
