Threw down a chuck roast on the and smoked it over with a few mesquite chunks until it was as tender as pulled pork. Cooked some ground beef in my dutch oven before combining both meats & adding the rest of the ingredients.

Been itching to get my hands on some more Australian Waygu ever since we did that Wagyu Picanha last year. Lil salt lil pepper and of course with a couple mesquite chunks in there for smoke. Brought it up to 120Ā° on our then seared it off on our Summit Kamado because it is a PAIN to remove a hot conveggtorš.

We didnāt win but we managed to compete with a bunch of experienced teams and came in 11th place! We learned a ton and got to meet so many people from the New England barbecue scene. Many friends were made and lessons were learned. It was an honor to hear that our ribs were cooked perfectly and it felt amazing being able to crush a brisket in just 8 short hours. We were so busy having fun cooking and socializing that not too many pictures were taken but countless memories were made and we canāt wait for the next competition.

Threw down 2 Prime Briskets, 16 Beef Ribs and more St Louis Ribs than I could count all smoked with a blend of Cherry & OakšØ. Thank you for the opportunity, I hope your guests loved it.
