Zest of 1 lemon
Juice of 2 lemons
1/2 cup cherry tomatoes, halved
1/2 cup Kalamata olives, pitted and halved
1/4 cup crumbled feta cheese
Fresh basil leaves, for garnish
Salt and black pepper, to taste
Directions:

Season the chicken breasts with salt, black pepper, and the dried herbs (oregano, thyme, and rosemary).

In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until they are cooked through and have a golden-brown crust. Remove the chicken from the skillet and set it aside on a plate.

In the same skillet, add minced garlic and sauté for about 1 minute, or until fragrant.

Add the lemon zest and lemon juice to the skillet, stirring to deglaze the pan and combine the flavors.

Return the cooked chicken breasts to the skillet. Add the cherry tomatoes and Kalamata olives. Simmer for another 5-7 minutes, or until the tomatoes are slightly softened.

Sprinkle crumbled feta cheese over the chicken breasts and cover the skillet for about 2 minutes, allowing the cheese to melt.

Garnish the Lemony Mediterranean Chicken with fresh basil leaves.

Pickle Brine Chicken

Ingredients:

4 boneless, skinless chicken breasts
1 cup dill pickle brine (from a jar of dill pickles)
1/2 cup buttermilk
1 cup all-purpose flour
1 teaspoon paprika
1/2 teaspoon garlic powder
Salt and black pepper, to taste
Vegetable oil, for frying
Dill pickle slices, for garnish (optional)
Directions:

In a bowl, combine the dill pickle brine and buttermilk. Place the chicken breasts in a resealable plastic bag and pour the pickle brine mixture over them. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours. This helps to tenderize and flavor the chicken.

In a separate shallow dish, mix the all-purpose flour, paprika, garlic powder, salt, and black pepper.

Remove the chicken breasts from the pickle brine mixture, allowing any excess liquid to drip off.

Dredge each chicken breast in the seasoned flour mixture, ensuring they are evenly coated. Press the flour mixture onto the chicken to help it adhere.

Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.

Once the oil is hot (around 350°F or 175°C), carefully add the chicken breasts to the skillet. Cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C).

Remove the chicken from the skillet and place it on a plate lined with paper towels to drain any excess oil.

Garnish with dill pickle slices if desired and serve the Pickle Brine Chicken hot.

🍍🍰 Pineapple Cake with Lemon Whipped Cream 🍋🌿

Ingredients:

200g fresh pineapple 🍍
3 eggs 🥚🥚🥚
160g + 15g butter 🧈
160g flour 🌾
160g sugar 🍬
0.5 sachet baking powder 🧁
1 tbsp. brown sugar 🍯
50g mascarpone
15cl full cream 🥛
1 lemon 🍋
10 lemon balm leaves 🌿
30g icing sugar 🧊
Directions:
1️⃣ Preheat the oven to 180°C. Cut the pineapple into small pieces and drain them.
2️⃣ Beat the eggs with the powdered sugar, then add the flour, baking powder and warm melted butter.
3️⃣ Pour the batter into a buttered mold and cover with pineapple. Sprinkle with brown sugar.
4️⃣ Bake in the oven for about 40 mins.
5️⃣ Pour the liquid cream into a bowl, add the mascarpone and icing sugar. Mix everything together, then whip into whipped cream with an electric mixer.
6️⃣ Stir in 2 tbsp. grated lemon zest and chopped lemon balm leaves. Place in the fridge to serve this chilled whipped cream with the cake.

Bohemian Orange Chicken

Ingredients:

For the Chicken Marinade:

4 boneless, skinless chicken breasts

2 cloves garlic, minced

For the Orange Sauce:

1/2 cup orange juice
Zest of 1 orange
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon cornstarch
2 tablespoons water
1 tablespoon butter
Directions:

Marinating the Chicken:

In a bowl, combine the orange juice, orange zest, olive oil, minced garlic, dried thyme, salt, and black pepper.

Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, allowing the flavors to infuse.

Cooking the Chicken:

Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade.

Grill the chicken breasts for about 6-7 minutes on each side, or until they are cooked through and have grill marks. The internal temperature of the chicken should reach 165°F (74°C). Remove the chicken from the grill and let it rest while preparing the sauce.

Making the Orange Sauce:

In a small saucepan, combine the orange juice, orange zest, honey, and soy sauce. Heat the mixture over medium heat, stirring occasionally.

In a separate small bowl, mix the cornstarch and water to create a slurry. Gradually add the slurry to the simmering sauce, stirring constantly until the sauce thickens, which should take about 2-3 minutes.

Remove the saucepan from heat and stir in the butter until it melts and the sauce becomes glossy.

Serving the Bohemian Orange Chicken:

Slice the grilled chicken breasts into strips or cubes.

Drizzle the prepared orange sauce over the chicken or serve it on the side as a dipping sauce.

Garnish with fresh orange slices or zest, if desired.
