Potatoes may possibly be my favorite vegetable! And I don’t mean chips or French fries. Nothing like a good baked potato or my fave stuffed sweet potato.
Potatoes are one food that I usually try to buy organic - yes, it is a root, soaking up all that’s in the soil, but also I have found they tend to just taste better!

Have you been doing ? This is my take on lentil loaf.
Paired with mashed potato and the sweet green beans from my CSA…traditional British meal, vegan style! Got top marks (gold medal?) from hubby.

Whether you join a CSA (community supported agriculture = farm share) or shop at your local farmers market, there’s nothing quite like really fresh vegetables!
I get a share weekly from and often can eat veggies the day they’re picked!

Not everyone’s a breakfast person, but I definitely am! Some research indicates that consuming more of your calories at breakfast (and less at dinner) is good for metabolic efficiency.
Makes sense, right? You don’t fill up the gas tank after your road trip. 😜 🚗
BUT…it matters what you start with. Protein and fiber fill you up and keep you satiated.
So if you haven’t thought about adding veggies and legumes (like this tofu breakfast sandwich from ) to your breakfast, I urge you to try it!

A plant based breakfast need not be a sweet one.
Although I ❤️ a good bowl of oatmeal (or even some overnight oats), there are plenty of savory vegan options…like this white bean avocado toast with pickled red onions.

There are lots of detox programs and potions out there, but the truth is our bodies are amazingly resilient and typically handle toxins with aplomb!
Drinking plenty of water and consuming a variety of fruits and vegetables (in as near to their natural state as possible) is what you really need to keep your liver happy and your body healthy!
Add in some fermented foods like sauerkraut, kimchi, pickled vegetables, tempeh or sourdough bread for a boost.

Did you know that livestock production emits more greenhouse gasses than all the cars, trucks, trains and planes in the world?
Commit to eating meatless meals one day this week. It could be a meal you already eat that’s “accidentally vegetarian” or a made-for-you food like veggie burgers.
In addition to lowering GGE, your shift reduces water usage, deforestation and species loss.
As an added bonus, replacing meat with plants is good for you physical and mental health!
Now that’s a big impact!

Smoothie protein hack! Freeze slices of tofu to use in your next creamy, icy smoothie! This one was tofu, chocolate sport protein, frozen mixed berries and almond milk with a bonus kale leaf thrown in (love my leafy greens!)

Introducing…leftover leftovers!
Yesterday I made a delicious colcannon, a dish traditionally made with leftover mashed potato (served with sausage, mixed greens and homemade vegan soda bread. 😋
Today I added some baby spinach and chickpeas. Still yum! 😋
You just can’t go wrong with cabbage and potatoes. And always chickpeas!
