Don’t forget to get your tickets to Junior Culinary School with July 25th! Chef Cam began doing these classes for young chefs and is now bringing them to the ! Open to ages 8 and up, students will learn about the farm our corn comes from, how to make fresh tortillas, how to render pork fat, knife cuts of the produce they will be using on their tortillas, and many other topics! At the end, the class will enjoy a meal together in the dining room and use the produce they cut to make their tacos!
If you’re a parent needing an afternoon to yourself, it’s a perfect opportunity for you! Chef Cam’s two boys are 11 and 12 and they will be there at the class as well so there’s plenty of company!

Did you know, at our Atlanta location, our Solola Breakfast plate was named for one of our prep chefs, Miguelito? Solola is his home town in Guatemala and would watch him make this plate every morning for breakfast but with quick scrambled eggs. Check out this beautiful rose hue to this line caught Corvina from Brazil that just arrived at our Gezzos Atlanta location! Though this fish has a fishing season from May - December, our fishermen only fish for it four months of the year to support conservation efforts. Available tonight for both ceviches!
We also have fresh line caught Cobia from the northern coast of the Gulf yesterday for fish tacos, and black cod caught off the cost of Monterey Bay!

Well this is exciting! Tomorrow, at our Upper Westside Atlanta location, for our Pescado Asado dish, we will have Copper River Sockeye Salmon! And these photos are the actual fishermen and boats that brought them in for us. For you!
Every year, thousands of salmon migrate 300 miles from the Pacific Ocean to Alaska’s Copper River to spawn with a very short availability season which last until the end of August.
“The Wagyu of Seafood” and “The King of salmons” are two of the nicknames for this type of salmon due to its succulent and buttery texture, which apparently is superior from other King salmon populations in Alaska due to a distinction in their genetics.
What makes the salmon unique is their relative abundance of omega-3 rich fats. Because the river is so long and challenging, the fish have evolved to pack away extra fat during their time in the sea so they have enough “fuel’ to make the arduous journey upriver to spawn. This lends them the delicious, rich flavor so many crave.
The Copper River King salmon run is an important cultural tradition for the native peoples of Alaska. For thousands of years, these communities have relied on the salmon run as a source of food and spiritual nourishment. Today, many Alaskans continue to celebrate and honor the salmon run as a vital part of their heritage.
