🌊 The West Coast IPA originated in California in the 1970s
🌊 West Coast IPAs are characterized by a strong emphasis on hops
🌊 Brewers on the West Coast pioneered new techniques to showcase the flavors and aromas of hops. This included the use of dry hopping, where hops are added late in the brewing process or directly to the fermenter to maximize their aromatic impact without contributing excessive bitterness.

Cold IPA Collab 🧊🍻 Featuring Big Country 🤝 Protector Brewery
The collab: We teamed up with our fellow organic brewers and friends at in San Diego, CA on a new venture for both breweries…a Cold IPA. Sean Haggerty and his SoCal team have been brewing up crazy good IPAs using organic ingredients since 2017, and we are thrilled to partner with them on this project!
The beer: A hoppy and crisp West Coast Style IPA recipe is made even crispier with few tweaks to the mash bill and a dose of lager yeast instead of ale yeast, lightening up the color, the body, and the finish. It drinks easy with the Citra and Cascade hops providing a moderate bitterness and bright citrus taste.
Clear eyes, full beers, can't lose.

➡️Tell us about what you do at BC?
I definitely wear a lot of hats in this role. It’s fun being involved in so many creative parts of Big Country from coordinating photoshoots, strategizing digital ads, designing cans and more! Everyday looks a little bit different and it’s a great feeling being a part of a small, but mighty team!
➡️What's your favorite Big Country beverage and why?
Gotta go with the TexMex lager, but that could change with some potential new things coming up this year 👀
➡️Where's your favorite place to enjoy BC?
At a game night with my pals!
➡️Favorite thing to do in your city?
Explore new bars or restaurants (it feels like there’s something new opening every week!) and of course go to concerts.
➡️Your dream seltzer flavor?
Anything tropical always hits the spot for me, I’d have to say something like Coconut Lime or Pina Colada.
➡️Currently listening to/watching/reading?
Listening to: The Strokes, always. I also have The Daily, Today Explained and The Journal in my podcast rotation.
Watching: anything with Gordon Ramsey in it.
Reading: tried reading The Only One Left, but couldn’t really get into it, but I’m going to start My Policeman per a friend’s recommendation. Trying to read more and TikTok less in 2024!

TexMex tasting notes: A crispy, dry lager is given the Texas treatment by adding a touch of sweetness from malted maize and subtle spice from Tettnang and Sanz hops.

Why organic?
Big Country believes in ingredients that are better for you and better for the planet. That’s why our beverages are crafted with certified USDA ingredients.
🌱This means that the cropland must have had no prohibited substances applied to it for at least 3 years before the harvest of an organic crop, and that soil fertility and crop nutrients are managed through tillage and cultivation practices, crop rotations, and cover crops.
In short, it means more care for the crop, more contact with the farmers, and less stress on the soil and downstream environments.
