Paper Route is an artisanal small-batch bakery, taking classic American treats to the next level, and then delivering them to your doorstep! We work with Certified Organic sugars, flours, spices, and produce, cage-free eggs and grass-fed butter. In an effort to spread joy to those who need it most, we use a portion of our profits to bring free goodies to hospice care patients and sick kids. We grew up here in Austin, and now we’re out to nourish the city we love!

Seems to me that this is like, the People’s Choice Awards but for food, and we are dumbfounded, thrilled, and honored to win. Thank you, Austin, for receiving Paper Route with such warmth and enthusiasm over the past five years. Thank you to our customers who have written reviews online, who have bought cake slices to share with friends and neighbors, who have chosen a Paper Route cake to celebrate their birthday or retirement or baby shower or wedding.
We are a tiny little team of five individuals, working extremely hard day in and day out to create the best cakes we can dream up. We may not take ourselves very seriously, but we treat our work like it’s sacred. The pay off is that we get to share our art with you, our community, and so we get to participate in the joy, love, and celebration that surround us. This moment of recognition is just, well, icing on the cake.

For Mother’s Day each year, my family drives to a little backroad about an hour east of Austin to pick wild dewberries alongside the railroad tracks. It’s, so much fun. When you first get out of the car, all you see is thicket. Wild, hungry, all-consuming thicket. The air is hot and muggy and peppered heavily with mosquitoes. You wade your way into a sea of brambles, holding your arms out by your sides. You pick a spot that feels right and you crouch down, staring blankly ahead in a single direction. You wait a couple minutes, and your eyes adjust, and suddenly in the midst of all that thicket, hidden in the shade of jagged leaves, you see... a berry. All at once, you see ten more. Then a hundred! Then a thousand, too many to count, the brambles baring forth an endless bounty of big, beautiful dewberries just for you.
Thank you Mom , for showing me how to look closely at things. For sitting patiently with me in discomfort and wilderness. For showing me the beauty and the joy and all the riches hidden in the thicket.

WELP, tonight is the Tastemaker Awards, and I’ve been nominated for Pastry Chef of the Year! I am truly honored to be listed among such talented, hard working, and prestigious chefs (scroll to the right to see the full list!)
I’ve never called myself a Pastry Chef, because I didn’t go to culinary school, and lack familiarity with some of the fundamentals usually associated with that moniker. But, whatever it is I do (maybe we’ll call it baking), I take it EXTREMELY seriously, and have spent my lifetime learning from the craft. It means the world to be recognized by my community for my work in such a succinct and tangible way.
These are 5 things I love about baking, in no particular order.
1) It connects me to my family (who are all, incredibly talented chefs), and to my heritage. When my great grandmother immigrated to Texas from Ukraine in the 1890s, one of the only things she brought with her was a bread bowl for kneading Challah, carved from a single tree trunk. That bowl is currently in my parents’ kitchen, holding fresh oranges & pita chips.
2) The chaos of it all! People go to the gym to fight gravity, and even though it’s a losing battle, it makes them stronger. I come to the bakery to fight chaos, and I lose, constantly, but I am stronger for it.
3) The magic! I take grains & berries & flowers from the earth and grind them into powders & goops, and I mix those into a potion or a treat that makes people feel something. With intuition & the labor of my own two hands, I am able to imbue the dust of the universe with value, and If that’s not alchemy, I don’t know what is.
4) Baking has 1 quality that makes it kind of unique among the various forms of artistic expression: the final product is supposed to be something that people... enjoy. The imperative to create pleasure is a pretty tremendous constraint, and it forces me to be creative in a really specific and interesting way.
5) The people. Bakers tend to be grounded, hyper-competent, introspective empaths. They’re the kind of people you’d want on your life raft, and let me just say, I would sail the ocean blue with my Paper Route team.

My mom makes me a chocolate raspberry cake for my birthday every year (love you mom!), and Lo and behold, it’s become one of my all-time favorite flavor combinations. This cake is equal parts dangerous and comforting, titillating and nostalgic. It’s a liminal flavor space where the tart zing of a fresh raspberry crashes brazenly into the bittersweet comfort of a chocolate shore. It tastes like growing up, like a peak behind the red velvet curtain, like riding to prom in a limousine.

Y’all! Meet Vanda! Vanda is a regular here at Paper Route, and is also just a one-of-a-kind human being who radiates joy and makes the world a better, brighter place. She started coming here soon after we opened our brick and mortar back in 2018, and her favorite has always been the milkshake cookie.
Vanda has a big, ebullient laugh and a contagious grin. She frequently stops by the bakery on her way home from a work out (she’s kind of, like, a fitness legend), and always ALWAYS has her nails done. Not just done, but DONE.
Vanda, thank you for your unwavering joviality and your generous smiles. You always brighten our window, and it’s an absolute pleasure to bake for you!

Paper Route Bakery will officially reopen to the public tomorrow - Friday, April 23 - at 10:00 am. This long awaited reopening has been met with fanfare from across the globe. An anonymous Paper Route enthusiast has reportedly hired a group of live kangaroos to dress in 1920s flapper dresses and perform a choreographed swing dance in honor of the occasion.
At this very moment, the bakers are hard at work, zesting Meyer lemons, chopping fresh chives, and folding brown butter fudge into chocolate chip cookie dough. They are guided by hand written recipes, lovingly laminated and tacked to the wall, and by a soundtrack of golden oldies, along with which they sing unabashedly.
Paper Route will be open from 10 am to 8 pm tomorrow, Saturday, and Sunday, with a full menu of scones and cookies. All are welcome; kangaroos encouraged.

Paper Route Bakery will be open tomorrow, Saturday, April 17, from 1 pm to 3 pm. There will be chocolate chip cookies with brown butter fudge, as well as amaretto sugar cookies with peanut butter fudge. These are known to Paper Route regulars as, “milkshake cookies.” Experts have deemed them, officially, ‘mouth-watering.’ One individual, who preferred to remain anonymous, described them as ‘hubba hubba.’ There will even be an old recipe from the Paper Route Bakery cookie vault - Lemon Meltaways.
Rumor has it there may also be cakes to sample from the new Paper Route cake menu. An uncredited source dropped mention of an orange cake with pistachio streusel.
Paper Route will be officially reopening next Friday, April 23. Freshly zested Meyer lemon glaze will be applied to golden-baked lemon blueberry scones.
Until then, this is your one chance to get that Paper Route good good.
