Try Air-Fried Maine Lobster Rolls

Servings - 4 rolls
INGREDIENTS
Air Fried Lobster Rolls
4 Raw Maine Lobster tails to be cooked in air fryer
4 New England-style split-top hot dog rolls
Unsalted butter, melted - 2 TBSP
Olive oil - 1 TBSP
Old Bay® seasoning - 1/2 TSP
Paprika - 1/4 TSP
Salt and black pepper - TO TASTE
Fresh lettuce leaves (OPTIONAL, FOR GARNISH)
Lemon wedges (FOR SERVING)
Garlic Aioli Sauce
Mayonnaise - 1/2 CUP
Garlic - 2 CLOVES (MINCED)
Fresh lemon juice - 1 TBSP
Hot sauce - 1/4 TSP
Dijon mustard - 1/2 TSP
Salt and pepper - TO TASTE
DIRECTIONS:
Step 1:
Prepare the Garlic Aioli Sauce.
Step 2:
In a small bowl, combine the mayonnaise, minced garlic, lemon juice, Dijon mustard and hot sauce. Stir well to combine.
Step 3:
Season the garlic aioli sauce with a pinch of salt and black pepper. Taste and adjust the seasoning as needed. Cover and refrigerate the sauce until ready to use.
Step 4:
Prepare the Air-Fried Lobster Rolls.
Step 5:
Preheat your air fryer to 380°F (193°C).
Step 6:
Place lobster tails in the air fryer for about 5-7 minutes. Cook until the lobster is opaque and tender. Check it occasionally to avoid overcooking.
Step 7:
In a mixing bowl, combine Old Bay® seasoning, paprika, olive oil, salt and black pepper. Remove lobster meat from the shell and chop up the cooked lobster meat and gently toss to coat the lobster meat evenly with the seasonings. Drizzle a generous spoonful of the garlic aioli sauce and mix until coated.
Step 8:
Brush the outside of each hot dog roll with melted butter.
Step 9:
Place the buttered rolls in the air fryer basket, open side down. You may need to work in batches if your air fryer is small. Air fry the rolls for about 2-3 minutes or until they become slightly crispy and golden brown. Remove them from the air fryer and set aside.
Step 10:
Once the buttered rolls are done, you can assemble the lobster rolls. Place a fresh lettuce leaf (if using) inside each roll.
Step 11:
Lightly chop the lobster and spoon a generous amount of lobster into each hot dog roll.
Step 12:
Serve your air-fried lobster rolls with lemon wedges on the side. Enjoy the delicious, crispy and flavorful lobster rolls with the creamy garlic aioli sauce.

Roasted Maine Lobster on Garlic and White Bean Bruschetta

RECIPE - Servings 8
INGREDIENTS
Maine Lobsters - 1½ POUNDS EACH 3 EA.
Garlic Clove - FINELY CHOPPED 1 EA.
Red Pepper Flakes - 1 PINCH
Thyme - 1 TSP.
Sage - 1 TSP.
Salt And Pepper - TO TASTE
Country Bread
HALVED, THEN SLICED ½-INCH THICK 24 SLICES
Garlic Clove - WHOLE 1 EA.
Salt - 1 TBSP.
Salt And Pepper - TO TASTE
Shallots - FINELY CHOPPED 2 EA.
Garlic Clove - FINELY CHOPPED 2 EA.
Fennel Seeds - TOASTED, CRUSHED 1 TBSP.
Lemon Zest - 1 EA.
Red Pepper Flakes - ¼ TSP.
Parsley - COARSELY CHOPPED 1/4 CUP
Olive Oil - EXTRA VIRGIN 2 OZ.
Cannellini Beans - COOKED 2 CUPS
Water - 6 QT.
Olive Oil - EXTRA VIRGIN 2 OZ.
DIRECTIONS
Step 1: For the bean purée
Place the olive oil, garlic, red pepper flakes, and herbs in a medium sauté pan. Cook over low heat for 5 minutes. Add the beans, salt, and pepper to taste. Cook over medium-low heat for about 5 minutes, or until the flavors meld. Place in a food processor and process until smooth. If the mixture seems dry, add a little water and extra virgin olive oil to achieve a creamy texture. Keep warm.
Step 2:
Meanwhile, grill the bread on both sides. Wipe one side of the bread with the whole garlic, and drizzle with extra virgin olive oil.
Step 3:
In a very large stock pot over high heat, bring the water to a boil and add the salt. Kill the lobsters by inserting that point of a large knife into the back of the shell where the tail meets the body. Add the lobsters to the boiling water and blanch for 2 minutes. Remove the lobsters and drain them.
Step 4:
Remove the claws and pull the meat from the shell, cut through the head and tail lengthwise, and pull out the tail meat in two whole pieces. Slice into ½-inch thick medallions. Combine with olive oil, shallots, chopped garlic, pepper flakes, lemon zest, and crushed fennel seeds in a bowl. Season well with salt and pepper.
Step 5: To roast the lobsters
Preheat the oven to 450ºF. When ready to cook, heat a sauté pan in the hot oven. Add the lobster with some of the oil to the pan, toss, and place back in the oven to finish cooking, tossing periodically. Remove from oven when the lobster is cooked, 6 to 8 minutes. Add the chopped parsley so it sizzles.
Step 6:
While the lobster is cooking, spoon the bean purée on the bread. As soon as the lobster comes out of the oven, top the warm white bean bruschetta with the lobster and drizzle with a few drops of the parsley oil.

This simple, crave-worthy, gooey sandwich can be served as a meal or an appetizer sliced into small pieces and drizzled with sauce. The sweet, spicy, smoky and rich “everything sauce” can be used on, well, everything. Always have some of this in your fridge ready to be slathered over grilled fish, chicken, veggies, beef, or even toasted bread.

Servings 2
INGREDIENTS
Maine Lobster Meat
4 OZ (FRESHLY STEAMED AND PICKED)
Cucumber 1⁄2 CUP SLICED
Mascarpone Cheese 2 TABLESPOON
Tomato 1 RIPE,SLICED
Lemon 1 SLICED IN HALF
Aged White Cheddar 2 TABLESPOON SHREDDED
High Quality Sandwich Bread 4 SLICES
Butter 2 TABLESPOON
Everything Sauce
Chipotle 1 TABLESPOON MINCED
Pickle 1 TABLESPOON CHOPPED
Mayonnaise 1⁄2 CUP
Sriracha 1 TEASPOON
Pickle Juice 1 TABLESPOON
Ketchup 1 TEASPOON
Tomato Juice 1 TABLESPOON
Lemon 1 ZESTED AND JUICED
Honey 1 TEASPOON
Dijon Mustard 1 TEAPOON
DIRECTIONS
Step 1: Start building the sandwich
Spread the mascarpone cheese evenly over the inside of each piece of bread. Layer the bread bottoms in the following order: cheese, tomato, caramelized onion (it’s ok if it is still warm), tomato, cucumber, Lobster and a touch more cheese. Top with the remaining bread.
Step 2: To cook the sandwich
Place 1⁄2 the butter in the pan and heat until melted. Add the sandwich and toast over medium heat (it may take a few minutes on lower heat, but it is well worth the melted crunch). Before you flip the sandwich, add the remaining butter, then flip. Place the entire pan in the oven for 5 minutes.
Step 3: For the Everything Sauce
Combine all the ingredients in a bowl with a whisk and set aside.
Step 4: To serve
Slice the sandwich in half and serve alongside the everything sauce for dipping. Squeeze the lemon juice over the sandwich at the last minute to add a touch of acid. For a messier, sloppier, finger-licking good time, drizzle the sauce right over the sandwich. Garnish with fresh dill sprigs.
