Well that’s a wrap folks! After 3 years, 4,604 fruiting bags, and many, many pounds of mushrooms, the farm is officially Amanda’s! I’m very excited to see where she takes it!

This month I’d like to feature the Indigenous Environmental Network. The IEN is a coalition of indigenous, grassroots environmental justice activists. IEN helps build the capacity of indigenous communities to protect the land, water, air, natural resources, and health of people and the earth, as well as to build economically sustainable communities. Ashby Fungi will be donating 5% of our total profits in the month of November to IEN.

Noodle stir fry with beech mushrooms. I love how easy they are - small enough that you don’t have to chop them up at all. And they have a nice chew without being rubbery!
