Steak & Egg Quesadilla with local sourcing notes below.
Ingredients:
3 large eggs
1/4 pound skirt steak
1 tablespoon butter
2 cups cheddar cheese, shredded
4 flour tortillas
3 tablespoon oil
Salt and pepper, to taste

🥚 several farmers offer eggs each Saturday like Whited Farm Produce, Kennedy Farms at Chelsea, Henke Farms, Wallace Homestead, and Stone Hollow Farmstead. Did you know farm eggs hold more nutritional value than store bought eggs?
🧑🌾 directly support Alabama ranchers like Twin Springs Farm LLC, Sherrill Family Farms, Indigo Ridge Farms, Yellow Rose Ranch, and HD Farm this season.
Directions:
Slice skirt steak and cook in a medium skillet over high heat, seasoning with salt and pepper. Remove the cooked steak and add the butter.
Scramble the eggs until fluffy and remove from pan. Add oil to a medium size skillet over medium heat.
Place one tortilla in the pan and top with cheese, steak, eggs and cheese again to help it stay together. Place the other tortilla on top and cook, turning once, until both sides are golden brown, and the cheese is melted. Repeat with additional tortillas and fillings.
Cut into wedges and serve with your favorite salsa. 💃

2 cups packed spinach or arugula
1/2 cup Greek yogurt
1 orange, peeled
1 tsp. fresh ginger
2 tbsp. peanut butter
1 tbsp. local honey
2 tbsp. whey protein or collagen powder
1 cup milk
