The origin of the name "Phở" (pronounce: Fuh) is unclear until now. Some sources stated that the French colonizers in the 20th century, upon seeing the wandering phở vendors in Hanoi, noticed a flickering flame, and exclaimed loudly: 'Au feu! Au feu!' (Fire! Fire!). Then the name 'phở' is originated.
But some also stated that many Vietnamese youths in the early 20th century were conscripted into the French colonial army, known as the Le Duong forces, among them a man named Huynh who had previously worked as a sous-chef for the Governor-General of Indochina.
Huynh's unit was stationed in Marseille (France). He held the position of head chef for the entire battalion of soldiers from Annam (Central Vietnam). Every morning, he would give the order to light the kitchen stove by shouting: "Feu! Feu!" which means to ignite the fire to cook beef soup for the soldiers' breakfast with dry bread.
By seeing the Vietnamese soldiers didn't eat breakfast much, Huynh came up with a new dish, hoping that his fellow Annamese soldiers would find it more palatable. He then used French-style beef broth infused with spices like cinnamon, cardamom, and ginger, then seasoned it with fish sauce. He added scallions, cilantro, and onions to suit the Vietnamese taste. And that's how Phở is "known to be originated".

Fact of the day: Banh mi, a popular Vietnamese sandwich, is believed to have originated from the French baguette brought to Vietnam by French soldiers during the colonization period. However, the Vietnamese version of banh mi has a distinct texture with a fluffier interior and crispier crust compared to its French counterpart. This difference can be attributed to the specific baking tools and techniques used in Vietnam. In the 1860s, when France first arrived in Vietnam, wheat flour and the original baguette shape were introduced to the country. However, due to the expensive cost of imported wheat flour and the inability to grow wheat in the tropical climate, baguettes remained a luxury item served to the upper class and French community at the time.
