Recently, I've been getting a lot of questions about why I don't have rainbow sprinkles in my store.

The short answer is - ingredients.

Here's an excerpt from the ingredient list of some of the main rainbow sprinkles brands:

❌☠️❌ Red #3 - made from petroleum.
❌☠️❌ Red #40 - made from coal and petroleum.
❌☠️❌ Blue 1 - made from coal and petroleum.
❌☠️❌ Yellow 5 - made from the byproducts of petroleum.

My philosophy is simple - if it's not good enough for my kids, it's not good enough for my store. The above colorants miss my mark by a long mile!

Sweet and flavorful are the local cantaloupes from SpringDell Farm in Littleton - small in size but bigger and bolder in flavor! As you can imagine they make stellar sorbetto which is ready for its debut today.
At Delini we use seasonal farm fresh fruits and the cantalopes are no exception!

Today, holding the newspaper and reading my story in one of the most influential newspapers in the United States - The Boston Globe, I can only say - “Don’t stop following your dreams”. I heard so many times that I will fail and went trough so many dilemmas to save Delini during the pandemic, but it was all worth it!

Thank you very much to each one of you who believe in my idea of crafting truly artisanal organic gelato.

It’s our honor and privilege to serve those who serve us! Glad to have Boston’s mayor and her family at Delini gelato!

It’s always hard to pick a flavor here, but she couldn’t resist our homemade Berry Yogurt gelato, made with organic Bulgarian yogurt, fresh organic strawberries and blueberries. I’m so proud!

It's that time of the year when the season is over and Delini has to close for the winter.

I want to thank everyone that supported us during these difficult times and appreciated the craftsmanship in making truly artisanal gelato with the very best ingredients I can find.

I'll take a couple months break to explore new ideas, attend gelato expos in Europe and come back recharged for another successful season in 2022.

Aren't these organic black plums beautiful? The colors are so vibrant!
Tender roasted plums in a deliciously sweet and fragrant syrup is my first step of the long process for crafting my new gelato flavor.

As typical for me, there are just a few quality, healthful ingredients that I would use and these plums are the star. There are also few pricey “foodie ingredients” I used for my gelato base - organic maple syrup from Baird Farm & organic cashews.

The result is absolutely astonishing - a creamy, flavorful, tangy and sweet flavor for all gelato lovers.

The almond is a widely cultivated nut, which is one reason why so many different countries and cultures favor almond desserts. I love almonds and as you know I cut no corners so I created my own organic almond paste with 0 additives and 100% organic almonds. For the purpose I use a special granite stone melanger which grinds the almonds for hours until the paste is perfectly smooth.

Making a gelato flavor with the almond paste is not an easy task and it took me quite a bit of work (i.e. trial and error and a few tears in between) to balance the sweetness, hardness and texture of the flavor. To complete the flavor I added local Carlisle honey and a pinch of Maldon salt. Needless to say I’m absolutely delighted with the end-result - the subtle floral notes from the honey are sublime with the almond and the salt underscore the nutty taste of the organic almonds.

My passion and relentless search for the best ingredients for my gelato flavors are well known and the featuring organic ingredients for my new flavor are no exception.

A day after my very special day (my birthday) I'm super proud to share with you my new and extremely unique flavor - Olive oil & White Chocolate gelato.

I created this flavor with one of the best Organic Olive oils in the world - Rincón de la Subbética (2020 World's Best Olive Oil Mills - 1st Place, 2021 NYIOOC - Gold, and many more awards). This olive oil is obtained in the first days of harvest from Hojiblanca olives. Hojiblanca, a prestigious varietal, is capable of growing in harsh soil and climate regions, where no other variety can grow successfully.

It is a culinary masterpiece for the discerning palate. Indeed, it is a gastronomic sojourn to the very essence of organic extra virgin olive oil paired with french gourmet white chocolate from Valrhona & Organic vanilla bean From Madagascar.

Fig season is upon us and produce stalls boast plentiful trays of purple figs, soft at the hips and oft leaking a drop of sap from their, um, bottom. Of course, they cost an eye — figs are a luxury in United States any time of the year — but the fig fanatic in me is willing to make any sort of monetary sacrifice to fuel my addiction.

I'm so excited to introduce you our new creation at Delini - Fig & Honey Yogurt. The flavor is created with our homemade Bulgarian yogurt, fresh figs and local honey from Carlisle.

Handcrafted with layers of Gianduia gelato (chocolate and hazelnut) Creme Brulee and sponge cake infuse with freshly squeezed orange juice. The top layer is covered with our own hazelnut praline and sprinkled with organic Valrhona chocolate and pearls.

Our mascarpone with figs gelato is the ultimate summer dessert. The silky and buttery cheese really makes this frozen treat something delicious and amazingly creamy. For ultimate delightful taste we sprinkle organic pistachio to each serving.

We first cut the fresh figs into quarters and place them in a small sauce pan. Add organic cane sugar, organic lemon zest, organic lemon juice and splash of water. Mix well and bring the mixture to boil over medium heat. We let the mixture simmer for а bit and stir every now and then until it thickens. On the next day we prepare our mascarpone gelato base and during extraction we add the figs.

When I first got some organic cherries I didn't really know what to do with them. I made a lot of flavors last season, so I wanted to surprise you with something different. Also, using the cherries directly for a classic cherry gelato would never be my style of course, so I first experimented with ricotta as the flavour variant, and... well, it didn’t work so well.

It then occurred to me that mascarpone just screams for cherries! I cooked down our fresh organic cherries with a little bit of sugar and lemon juice just until the cherries were softened and become syrupy, breaking up some of the cherries into halves and smaller chunks. This gets set aside to cool so it can be poured into the custard base later as it’s churning in the gelato machine.

This Cherry Mascarpone gelato has a mild, fresh fruit flavour that balances with the cheese for a sweet, creamy treat.Seriously I could not stop eating this gelato. And this... is one of the reasons why I love summer so much.

We loved our Rose oil Pistachio Baklava gelato and hope you will love it too. Layer upon layer of flaky, buttery, phyllo pastry filled with chopped organic pistachios….all held together by a sweet, meyer lemon syrup infused with organic Bulgarian rose oil and topped off with a sprinkle of gold flake. To fully complete this flavor we colored the gelato base with organic dragon fruit powder!

This Rose oil is also by a long mile the most expensive essential oil used in the gourmet food industry with a whopping price of $600 per fl. oz (33ml).

We work with the highest end Organic Bulgarian Rose Oil, directly imported from Bulgaria from the oldest operating rose farm in the world!

Like a good friend…we are just trying to push you outside of your comfort zone.

Live a little and expand your palate.

Happy birthday Delini Gelato 🎊🎂🎉

One year ago on that day we opened our doors.

In the last couple of weeks I started thinking about what we've done in these twelve months and what we've accomplished. I know one thing for sure - I left my heart at Delini.

I had a chance to create 100 different flavors, handcrafted and created by me. Life met me with amazing chefs, farmers and vendors all across the globe and without them I wouldn't be able to achieve this amazing gelato taste.

I kept my smile and energy even though many times I had a dilemma in my head if I should keep our doors open.

We're living in a world where companies are investing in artificial intelligence, mechanization and are cutting costs of everything they can. I started an absolutely diametrically opposed project where I create something from scratch with a lot of handwork, innovation and of course made with local and organic ingredients.

I picked a different, riskier and more difficult path and I'm proud of it.

I can 100% guarantee that I will not change anything at Delini as a quality and I will not stop investing and improving my knowledge and skills.

Delini will continue to not be a "grocery store" shop where you find the same flavors on the same shelf. We will continue to not be "fancy" with a shelf full of artificial sprinkles and toppings made of hydrogenated oils just for proffit. We'll continue to make our own waffle cones even though they're one size, non-vegan and not gluten-free, but 100% organic and super fresh. We'll continue to invest in expensive compostable packaging and speak even louder about how important this is.

Thank you to each one of you who believed in me and my mission of crafting a truly artisanal organic gelato. Thank you for your kind words and time to come to Delini and give me motivation to continue following my passion. Thank you for your generous tips and decision to spend some of your monthly budget on gelato. Thanks for your reviews, group posts and recommendations, without them we wouldn't be here.

This Salted Caramel gelato is one of those rich pleasures in life that is totally worth tasting, especially in this hot day.The combination of the decadent texture with the salty kick is just sublime!

I do believe this gelato deserves a partner in crime. I’m thinking brownies would be a perfect pairing!What do you think?
