Summer Supper: Pasta with Pesto and Summer's Vegetable
1 lb pasta of your choice
1 recipe pesto
Summer vegetables: tomatoes, eggplant, summer squash, broccoli, cauliflower, green beans, asparagus to name a few
Freshly grated parmesan
Cook pasta according to package directions, reserving 1 cup of pasta cooking water before draining.
Meanwhile prepare vegetables: summer squash and eggplant do best cut into bite-sized pieces and sauteed in olive oil with salt and pepper. Asparagus, broccoli, cauliflower and green beans may be cut into bite-sized pieces and quickly cooked in boiling, salted water until barely tender. Tomatoes are good raw and diced or for grape tomatoes, halved.
Toss warm pasta with pesto, vegetables and enough pasta cooking water to make saucy. Sprinkle generously with freshly grated parmesan. Taste and adjust for salt and pepper. Plate, garnishing with more parmesan and some freshly snipped herbs.

We love a composed salad for a summer supper!
Start with a bed of tender greens like green leaf lettuce or arugula or spinach or whatever you've got on hand.
Add some crunch: here we've got shredded radishes and cabbage. You do you - cucumber, celery, carrots would surely be nice.
Add some color with tomatoes, red peppers, corn, carrots whatever's around.
Next grilled vegetables (summer squash). Or eggplant or garlic scapes or mushrooms.
Make it substantial with chicken (as seen here), shrimp, steak, tofu.
Drizzle with a dressing of your choice - we used peanut sauce thinned with some coconut milk, to make pourable.
Garnish as desired! Cilantro in our version. Basil, mint, oregano are all good options. Crispy fried onions or shallots would be welcome too.

Celebrate Tropical Fruit with our cool, refreshing, summery Quinoa Fruit Salad with mangoes, strawberries and blueberries!
RECIPE
2 cups cooked quinoa
1 mango, peeled and diced
1 cup strawberries, quartered
1/2 cup blueberries
2 Tbsp pine nuts
Chopped mint leaves, for garnish
FOR THE VINAIGRETTE:
1/4 cup olive oil
1/4 cup apple cider vinegar
Zest of 1 lemon
3 Tbsp freshly squeezed lemon juice
1 Tbsp sugar

This protein-packed quinoa salad is brightened up with fresh mango, strawberries and blueberries, balanced with a tart vinaigrette and refreshing mint!
To make vinaigrette, whisk together olive oil, apple cider vinegar, lemon zest and juice, and sugar in a small bowl.
In a large bowl, combine quinoa, mango, strawberries, blueberries and pine nuts. Salad and vinaigrette can be stored separately in fridge for up to 3 days. Stir in lemon vinaigrette and garnish with mint leaves just before serving.

Sunday Supper: Herby Bulgur and Tomatoes with Grilled Halibut and a seasonal green salad
Soak I cup bulgur in 2 cups boiling water with 1 tsp salt for 20 minutes
Quarter 1 pint grape tomatoes, chop handful of mint or cilantro and handful of parsley
Thinly slice on diagonal a few inner stalk of celery and its leaves
Thinly slice 3-4 scallions
Toss vegetables and herbs with bulgur, lemon juice, olive oil, 1/2 tsp coriander, pinch of cayenne. Taste and adjust for s&p.
Lightly coat fish with olive oil, s&p, Grill to just cooked through.
Place bulgur on platter, fish on top. Drizzle with olive oil and squeeze lemon over all.

Basil in season!
While basil grows in summer's sun once picked it droops in the heat. We love delivering fresh, local basil, free of plastic containers to you but if your bin sits out in the heat for too long your basil gets tired, sad. Give it a quick pick-me-up in your counter-top green house. Place the stems in a glass of water, mist the leaves lightly with cool water and then cover with a plastic or compostable bag. In a few short hours it'll perk right up!
