Tie Luo Han, meaning “Iron Arhat,” is considered one of the Four Great Oolongs. It is one of the oldest and most famous tea varieties grown in the Wuyishan mountains. A personal favorite of ours, it is exceptionally thick and complex, containing strong notes of sweet prunes and heavy gravel, complemented by delicate floral notes on the aftertaste.

As NSYNC famously did not say, “it’s gonna be May!” Happy May! The flowers are finally blooming and the weather is perfect for enjoying some delicious first flush tea on the back patio. The Trident Tea Spotlight

Darjeeling, the “Land of Thunder”, is famous worldwide for the delicate high aroma teas it produces, though most of it is made into light oolong-style or black teas depending on the harvest time. The White Lightning Darjeeling really captures the best of both worlds, with the sweet roundness of a Chinese white and the active aromatics of a first flush Darjeeling.

Abeyot Ageze is a Gedeo farmer who has been running the Halo Beriti washing station for many years, and in 2017 he partnered with Mebrahtu Aynalem to form Boledu Coffee, who we have had the honor of working with for two years now. Abeyot, being a Gedeo farmer himself, and Mebrahtu work to with local farmers, developing farmer trainings, sharing profits with farmers, and by processing farmer lots individually to achieve the highest price possible for the farmer.

The result of this longstanding and intimate relationship with the local Gedeo farmers is a cup that ensures equity across the supply chain with maximum value remaining at the birthplace of coffee. This partnership between the growers and Halo Beriti continues to export a beautiful coffee profile of raspberry candy, lemon sorbet, sweet tropical fruit with a vibrant and syrupy mouthfeel.

Spring! Is! Coming! March at Trident 03/01/2023

Spring is in the air, the many street glaciers around Boulder are beginning to melt, we’re losing an hour (on March 12th) and the equinox is nearly upon us. This month we transition to an inventory system for our bookstore (for the first time in our 42-year history) and we’ll be bringing back cold brew starting on the equinox. Lots of things to look forward to! We hope you’ll stop in and say hi!

NEW from Idle Hands: Brazil Fazenda Das Almas (https://idlehandsroasting.com/shop/p/brazil-fazenda-das-almas)

Brazil has a complex history of conservation in the agricultural sector and the Muniz family came to understand early on that protecting the natural habitat of the farm not only benefited the environment, but also increased production yields and lowered the need for fertilizers. Today an impressive 37% of the farm is a protected forest area, 18.5% more than is required by the Brazilian Forest Code, including 7,000sq km of APP and ecological corridors including 21 natural springs. In 2017 the family set up a generator that runs off of biogas from the decomposing coffee fruit, making the farm fully self-supported by their own electricity.

The Muniz family continue to keep up-to-date extraordinarily well with modern processing techniques and methods and have continued their education more formally with courses in 2019 and 2020 to increase the production of exemplary lots. The coffee presented in this lot is a Catucaí, a naturally occurring cross between Icatu and Catuaí, which was machine pulped to remove the exocarp (skin) before being placed into sealed tanks and finally heading to the drying patios after roughly 69 hours of anaerobic fermentation. This “slow” process and care keeps the coffee astoundingly sweet with plenty of yellow fruit, stone fruit, mango and passionfruit, with a snappy apple like acidity. A true example of expertly produced coffee.

Hello and happy February! It’s been a cold, snowy winter, ideal for cozying up with a tea and a good book. This month we’re looking forward to some exciting new books, coffees, and music events. Late nite events are picking up on our back patio, so grab your friends and go show off those dance moves! NEW from Idle Hands: Ethiopia Aricha Anaerobic (https://idlehandsroasting.com/shop/p/ethiopia-aricha-boledu)

We have been lucky enough to work with Mebrahtu Aynalem directly, one of the founders of Boledu Industrial, who owns and operates the washing station in partnership with Abyote Ageze and local farmers. "We are the 2nd generation of coffee growers and now traders in our families. We decided to build a natural coffee processing site in Aricha to be used by the smallholders living in the region. Roughly 1500 growers use the facility, and we have 220 raised African beds for coffee drying," explains Mebrahtu.

The coffee is grown by local farmers typically apart of subsistence farming practices usually found across many parts of more forested parts of Ethiopia. Once the cherries are picked and brought to the washing station, Meb and the team sort the cherries to make up a 140kg lot. This “lot” is then placed in sealed fermentation tanks for 3-5 days. The objective here is to balance the conversion of sugars present in the cherry to alcohol with the overall pH of the solution – primarily by removing all nitrogen and oxygen. Once the desired fermentation is complete, the cherries are then moved to raised drying beds for 16-21 days. During the first two days the coffee is rotated every two hours to ensure even drying and consistent exposure to the air and sun. The lot is separated further by size and we’re left with an ultra consistent coffee to share with you. Super sweet citrus, vanilla buttercream, tropical fruits and florals make up this cup giving an impression of cream soda or Inca Kola.

Mexico Cup of Excellence #21 Arroyo Natural Typica (https://idlehandsroasting.com/shop/p/mexico-coe-arroyo-natural-typica)

The Typica lineage goes back to one of two genetic lines that can be traced to Yemen and from there to Ethiopia. It is thought to be one of the most genetically and culturally important varieties of coffea arabica and it was in this year’s competition that they used this coffee and placed 21st;

“We see that we have always been producers of quality coffee and that fills us with enthusiasm to continue participating. It’s the fourth time we participate in the Cup of Excellence, this being the first time our coffee is among the 30 best coffees in Mexico.”

We’re excited to share Torres Cortés family’s first award winning coffee with Trident. A natural processed Typica, this lot is filled with notes of cola candy, pineapple, berry cordial, maple syrup, and intense florals. Truly an outstanding coffee that showcases the quality of the Juquila area of Oaxaca.

Happy Holidays from Trident! The Bulang mountains in Southern China are renowned for the powerful, bittersweet teas they produce. One of the most famous terroirs for raw pu’er, this blend of old tree material from different villages has aged beautifully in wet Guangzhou storage. This sheng style pu’er tea was made from a blend of old arbor material harvested in the Spring of 2015 from different villages across a somewhat wide area. At 7 years of age, this tea has mellowed considerably. There is still some background astringency which should age out in a few years. Otherwise the character is rich and woodsy, with characteristic to***co and dried fruit notes. This is a very good value for this quality of material with a good head start aging. Anji Baicha (安吉白茶) or just “Anji White” is a popular and newly developed green tea from Zhejiang, China. Though called “white” it is in fact a green tea. Its long, needle-like leaves brew a sweet, complex, and highly refreshing tea suitable for drinking any time of the year. This especially high grade batch was acquired at great expense, but was well worth it. The lightly green liquor bursts with spring-time floral and garden aromas. Its taste is almost unbelievably sweet and coating. This is a true tea lover’s tea with a classic Chinese green tea profile, though its natural sweetness should make it approachable for almost anyone. Tea was first brought to Taiwan’s Wen Shan district in Taipei city over 300 years ago by Chinese immigrants from Fujian. This Mu Zha Tie Guan Yin is an authentic and traditional Taiwan oolong through and through, grown in the birthplace of Taiwanese tea and processed in the traditional manner. Unlike the majority of Chinese Tie Guan Yin oolongs, which are lightly oxidized and bright green, Mu Zha Tie Guan Yins are darker and roasted. The tea undergoes a long process of withering, rolling, sorting, and baking, which takes a true master to execute well. This tea was awarded “Fine Grade” in the Mu Zha Tea Farmer’s Association Competition of 2022. It tastes remarkably balanced, with sweet honey and red cherry notes, complemented by a medium level charcoal roast. We imported a very small amount, so get it while it’s here.
