Monday was National Mezcal Day and we are encouraging every agave lover to try various mezcals this week in honor of the rich history and culture behind this smoking spirit 🔥
Mezcal is a traditional Mexican spirit made from the agave plant, much like tequila, but with distinct differences in production and flavor. The word "mezcal" comes from the Nahuatl word mexcalli, meaning "oven-cooked agave." It's one of Mexico's oldest distilled spirits, with origins dating back to pre-Hispanic times when indigenous peoples fermented agave.

The Scotto family’s vinous heritage and history dates back to 1883 when Salvatore Dominic Scotto, an officer in the Italian Navy, began making wine at his home on the Island of Ischia, just off the coast of Italy. Great-great grandpa Salvatore passed his skills along to his son Dominic, who migrated to Brooklyn in 1903 and continued the family’s winemaking tradition in America.

Cava is a high-quality sparkling wine characterised by its bubbles and bright-golden colour. The name comes from the old underground stores in which the wine was originally stored, also known as cavas.
Like all wines, Cava is made from grapes that are fermented with sugar and wine to first create a “still wine.” The method for Cava production is called the “traditional method”, the production method for Champagne, which involves a first fermentation in barrels, followed by a second fermentation in the bottle. This method is also used to produce Champagne and other fine English sparkling wines.
Macabeo, Parellada and Xarel·lo are the most popular and traditional grape varieties for producing cava. Chardonnay Pinot Noir, Garnacha , Monastrell, Trepat and Malvasia are also permitted.
