One of the best (and heaviest) things April brought back from our London buying trip last year was this cookbook from Indian restaurant Dishoom. Titled “From Bombay with Love”, it’s a journey through the streets of Bombay and its Irani cafes. Arranged by meal — from breakfast, to lunch, dinner, and cocktails — it’s 400 pages of recipes, colorful photography, and delightful musings and reflections about the authors’ favorite cafes and their proprietors. It even includes a fold-out map of Bombay with their (admittedly highly biased) points of interest.

On a buying trip to London last year, we stopped for a meal at Dishoom, a Bombay-inspired restaurant with a devoted following. Of the many incredible dishes and cocktails we tried that evening, one stood out among the rest: The Kohinoor Fizz.

Dishoom’s version uses gooseberry syrup, which is hard to find stateside where gooseberries are less common. So we put our mixology hats on back at the BGS office and tried a few variations until we got one that matched the slightly tart flavor and delicate foamy fizz of the original.

We think our Strawberry Rhubarb Fizz makes a perfectly refreshing cocktail for summer and pairs nicely with rich, spicy dishes. Try it out and let us know what you think!

Strawberry Rhubarb Fizz

1 Tbsp strawberry rhubarb jam
0.75 oz lime juice
1.5 oz gin
0.5 oz Campari (or our favorite amaro, Crimson Snap by )
3-5 drops of Wonderfoam
4 oz prosecco (or champagne, or cava)

Add the first five ingredients to a cocktail shaker with ice. Shake vigorously. (This one benefits from a little extra shaking to really mix up the jam and to get a nice foaminess from the Wonderfoam.) Strain into a highball glass with ice. Top off with approx. 4 oz of prosecco. Take a bar spoon and give a quick stir to mix.

This month’s cocktail feels especially springlike to us with its vividly verdant color and earthy matcha undertones. Lemon juice adds a brightness that lifts the matcha and Japanese whisky. 🍵 🍋 🥃

We’ve mixed it in our new Yukiwa Baron shaker. The straight lines are ideal for a hard shake, necessary in this cocktail to really incorporate the matcha powder.

Matcha Highball

2 oz Japanese whisky
½ oz freshly squeezed lemon juice
½ oz Jack Rudy Demerara syrup
¼ tsp matcha powder
club soda
lemon twist for garnish

Combine the first four ingredients in a shaker filled with ice and shake vigorously.

Strain into a highball glass filled with ice and top with club soda.

Garnish with a lemon twist.
