One more time before the holidays get here!

Here is our tried & true method to cook our fresh sausage perfectly for your holiday dinner! Simmer it slowly until the internal temperature is 165 degrees. You used to cook it until “dead” (as our Grandmother used to say, meaning no pink). However, we have rosemary in our spice block and that can keep it a little pink. Never let the sausage boil because the quick rise in temperature can make the casing very tough and it can sometimes explode while cooking. You can eat the sausage after it reaches the temperature of 165 degrees but it can also be heated again by baking in the oven, in a frying pan, or any way you cook your smoked sausage.
