Of all the Detroit Style versions we’ve run, I think I’ve settled on this one being my favorite, thus far. And, with good reason. This baby is STUDDED with the best stuff from the best places. House-made Bacon from Always Something Farm Pork Belly, Broccolini + Green Chili Ricotta from Plato Dale Farm , Grana Padano and Honey from Promised Land CSA at Oles Family Farm - it’s smoky, crunchy, sweet, spicy, tangy and the vegetal char on that Broccolini sends things over the edge. You’ve gotta try this one. I’m serious.

Quick ‘Thank You’ to Hallwalls Contemporary Arts Center for letting us participate in Universal Wolf this past week. Such a great concept and such a fun time flexing our minds. That said, this plate wouldn’t be possible without the amazing inspiration of Ruby Merritt and their incredible artistic talent. Truly felt like we were perfectly paired for this.

If you look outside, you can tell this picture is not from today 😂. That said, there’s something specifically special about a Sunny, early morning inside these walls. Time to think, time to plan, time to dance a little if I’m feeling it. It’s one of my favorite times of day- quiet, ready to be completely flipped on its head and turned into a (hopefully) controlled chaos. It’s allocation SZN, baby. That means we’re currently getting the opportunity to stock up on some gems, rares, grails, or whatever you wanna call them.
This one here is a real treat and also one I don’t remember us ever getting a crack at in the past. Produced by Heaven Hill, Parker’s Heritage is made from the traditional Heaven Hill Rye Whiskey Mash bill consisting of 51% rye, 35% corn, and 14% malted barley. It’s considered their ultra-premium annual release and we can’t wait to crack this puppy open. Now, we haven’t tasted it (yet) but from what we understand, it’s got Lemon-lime citrus, burnt caramel, tea, and a touch of marshmallow on the nose-Hershey’s syrup, orange, black tea, dates, chocolate malt, rye spice and tannic oak on the Palate- and finishes with bitter coffee, chocolate malt, pecans and dry oak. Sounds robust AND incredibly interesting.

Years ago a young boy by the name of Casey Joyner came into my restaurant. His mother had previously reached out to me because Casey expressed interest in cooking and starting his own food business. Their first visit was cute as we gave Casey a tour of our kitchen, showed him our fresh farm veggies in the walk-in cooler and gave him a glimpse of what service looks like in a restaurant. I guess that stuck with him.
Fast forward to yesterday where Casey is about to graduate High School, has been cooking up a storm, growing all his own veggies in their home garden and following his dreams of starting his own Hot Sauce business. They gifted me an amazing basket of Peppers and Tomatoes, Herbs, Beef Tallow, Pickled Peppers, Pasta Sauce, Jerk Sauce and Blueberry Hot Sauce. It’s obvious that Casey has drive and talent and I can’t wait to taste through all of this. As a new(ish) parent, though, what strikes me the most is the pride and encouragement his parents have given him. Casey will go on to do great things, I’m sure. And, I’m happy to have had a small part in his story from a wide eyed little boy walking through our restaurant to a young man ready to chase his dream. But, I wanna make sure to give credit where credit is due. Mom + Dad. John and Charlene Joyner, you thanked me last night for being an inspiration for Casey on his journey through food. Let me thank YOU for being an inspiration to me on what it is to be a truly spectacular, integral and loving parent. If it weren’t for Charlene blindly shooting me a message online asking if I’d be willing to meet her son, none of this would have happened. So, from the bottom of my heart, thank you Charlene and John for setting an example of true parenthood. It’s beautiful and has touched me more than anything in my years in this Industry. And to Casey, you know where to find me if you ever need anything. You’re gonna do big things. ❤️

It started with making Horseradish with Daikon a few months back to see what would happen. I wasn’t expecting the Daikon to get as sweet as it did over time, but damn is it yummy!
Short Rib Pizza- Braised Beef, Cheese Blend, Shish*to Pepper, Horsey-Radish sauce, Grana Padano. It’s everything it sounds like it would be.
