Chipotle Lime Sweet Potato Salad 🧑🍳
Ingredients:
4 medium sweet potatoes, peeled and cut into ½-inch cubes
1 tablespoon avocado oil
½ teaspoon sea salt, divided
½ cup chipotle lime mayonnaise
1 lime, juiced
1 cup celery, diced
¼ cup red pepper, diced
¼ cup red onion, diced
¼ cup fresh cilantro, chopped
Instructions:
Preheat oven to 350°F (175°C).
Spread sweet potatoes in a single layer on a rimmed baking sheet lined with parchment paper. Drizzle with avocado oil and sprinkle with a pinch of sea salt.
Roast sweet potatoes for 30-40 minutes, or until tender, stirring halfway through.
In a large mixing bowl, whisk together chipotle lime mayo, lime juice, and remaining sea salt.
Stir in red onion, red pepper, and celery.
Toss cooked sweet potatoes in the mayonnaise mixture. Fold in cilantro.
Refrigerate to meld flavors.

This week we’ve got some fresh golden beets, yellow bell pepper, and sweet potatoes being delivered in our Farmboxes. We decided to get creative and create a Sweet Potato and Golden Beet hash! 🍠👩🍳
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬
1 large sweet potato
2 golden beets
3 tablespoons olive oil
1/2 cup chopped white onions (or red onion) (1/2 onion)
1/2 cup red (or yellow) bell peppers, chopped
1 clove fresh garlic, minced (or 1/8 teaspoon garlic powder)
1 teaspoon smoked paprika (or less)
1 green onion, chopped
salt and black pepper to taste
2 tablespoon chopped fresh parsley or chives
𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬
- PRECOOK SWEET POTATO: (quick version). Pierce the potato in a few places. Microwave for about 4 to 4 1/2 minutes until fairly tender but not too soft (it should still have enough firmness for easy cutting). Peel off skin with a small knife (or your fingers) or leave it on if preferred. Cut the sweet potato into cubes, about 1 inch/2.5 cm.
- PRECOOK GOLDEN BEETS: (quick version). Place beets in a large pan and cover with water so beets are submerged by 1-2 inches of water. Place on the stove over high heat and bring to a boil, covered. Boil for 30 minutes (or longer, depending on size of beets), until fork tender. Drain water off and fill pan with ice water. When beets are cool, rub peelings off – they should come right off! Rinse beets lightly to remove dirt or peelings and store in an airtight container in the fridge.
- SAUTÉ VEGETABLES: Heat 1 tablespoon of oil in a large skillet to medium-high heat. Add onions, peppers, garlic. Sauté for 4-5 minutes until soft and slightly browned. Spoon vegetable mixture into a bowl.
- SAUTÉ SWEET POTATO AND GOLDEN BEETS: Add remaining 2 tablespoons of oil to skillet on medium high heat. Add pre-cooked sweet potato cubes and golden beets in a single layer. Sauté for a few minutes undisturbed until browned on one side. Stir and sauté for a couple more minutes until browned on all sides.
- FINISH THE HASH: Add smoked paprika and stir. Add vegetable mixture, green onions and parsley. Sprinkle with salt and pepper to taste. Stir gently. Serve immediately.

Elevate your pizza experience with our Cauliflower Crust Pizza recipe. With just a handful of ingredients, you can whip up a gluten-free, low-carb crust that’s both delicious and nutritious. 🍕👩🍳👨🍳
Ingredients:
* 1 medium head of cauliflower, broken into florets
* 1 egg
* 3/4 cup shredded mozzarella cheese
* ¼ cup grated parmesan cheese
* 1 ½ tablespoons coconut flour
* ½ teaspoon garlic powder
* ½ teaspoon dried oregano
* ¼ teaspoon salt
* Freshly ground black pepper
For topping:
* 1/2 cup pizza sauce
* ¾ cup shredded mozzarella cheese
* Any other toppings your heart desires
Instructions:
1. Put half of the cauliflower in a food processor and pulse until it looks like rice (about 30 seconds). Transfer to a large bowl and repeat with the other half.
2. Microwave the cauliflower for 5 minutes or cook in a pot with 1 inch of water for 5 minutes with a lid on. You can also steam it.
3. Preheat oven to 425°F. Line a baking sheet with parchment paper.
4. Let cauliflower cool for 15 minutes. Then, squeeze out excess moisture using a dish towel until dry. This is crucial for the recipe.
5. Transfer cauliflower to a bowl, add egg, mozzarella, parmesan, coconut flour, garlic powder, oregano, salt, and pepper. Mix to form dough.
6. Place dough on prepared pan, forming a 9-10 inch circle with ¼ inch thickness.
7. Bake for 20 minutes until firm and slightly golden. Top with sauce and cheese.
8. Bake for 5-10 more minutes until cheese melts, then broil for 1-2 minutes until golden and bubbly.
9. Cool for a few minutes before cutting into 8 slices. Serves 4, 2 slices each.

What’s a chicken’s favorite vegetable? 🧐

Did you know eggplant is a nutrient-dense vegetable rich in vitamins, minerals, and antioxidants. It’s low in calories and high in fiber, making it beneficial for digestion and weight management. Additionally, eggplant contains compounds like nasunin, which may help protect cells from damage and support heart health. 💪
It’s Easter week, and one of our favorite traditions is dying our Easter Eggs with our friends and family! This year we decided to take a different approach with our color dye. 😊🥚
If you’d like to join us in the fun, gather your ingredients to dye with! Most are around your kitchen or can be purchased cheaply. Some may have even come in your Farmbox this week.
INGREDIENTS:
Red cabbage
Coffee grounds
Beets
Green tea bag
Loose-leaf hibiscus tea
Turmeric powder
Brown onion skins
DIRECTIONS:
Once you have selected an ingredient, place them in a pot. Add two tablespoons of vinegar (white, apple cider, any kind) and 1 quart of water to a pot. Add additional water if the ingredients are not sufficiently covered. Bring to a boil, then reduce heat. Let the ingredients simmer for 30 minutes. Strain the dye and put it into a bowl. Wait for the mixture to become room temperature before you begin to dye your eggs.
Submerge eggs into the bowl and refrigerate eggs in the dye for at least 30 minutes or up to 12 hours. The longer they soak, the more opaque the color will be.
