Zucchini Pizza Boats! These are the perfect way to eat some fresh summer veggies, but filled and topped with flavors we think are a little more fun…

How we made these super easy pizza boats:

Ingredients:
•Zucchini
•Pastorelli Italian Chef Pizza Sauce
•Pastorelli Spicy Pizza Seasoning
•Pepperoni
•Shredded Mozzarella cheese
•Fresh Basil
•Salt
•Toppings of your choice (we used red onion, and hot Giardiniera)

Instructions:
1. Preheat Oven to 375* and set aside a light greased baking sheet.
2. Slice your zucchini in half length wise. Using a spoon, scoop out the insides of each half and sprinkle the insides with salt.
3. Generously coat the insides of each zucchini slice with Pizza Sauce. We did enough so we could not see any green peaking through.
4. Lay the pepperoni (optional) over the sauce. To be more exact, cut the pepperoni so it fits the inside of your zucchini.
5. Sprinkle your cheese inside and on top of your zucchini.
6. Apply the toppings of your choice. (We used red onion and Giardiniera, you could also place your pepperoni on top as well)
7. Place the zucchini on your baking sheets and bake on the middle rack for 15-20min. Until the zucchini is tender and cheese has lightly browned.
8. Once out of the oven, dash on your pizza seasoning and fresh basil leaves to finish your pizza boats
9. Serve immediately and enjoy!!
