Well, we’re BACK OPEN TOMORROW after 49 days of exclusively serving online orders. None of us got covid, we created a lot of new recipes, and we didn’t go out of business. I’d call that a success. We’ll be open 8 - 6:00 everyday from here on out, AND we now have a deli case stocked with the grab and go food that is also available to order from @tockhq on our website, like the Lions Mane Mushroom Shephapds Pie using local @fourstarmushrooms goodies. We needed a cryovac machine for a Super Secret Project we’re working on, and thought it might be good to spend a little extra and get a sous vide machine. I prefer the sensual melding of flavors you experience from cooking in a pot, but damn if this method doesn’t make the most perfect little poached pears. Is it too late in the season for ice cream? What if it is @rish*tea chai vegan ice cream, served with warm apple pecan cobbler? This weekend is a Fall Comfort Food dinner, and it’s looking like it’s pretty near being sold out. Saturday is filled up, Sunday is very close, and there’s just a few spots left for tomorrow. But never fear! There is a pickup/delivery option. For a candlelit dinner here though, the menu will be: 1) Focaccia Breadsticks & Marinara: It's like Olive Garden for Vegans! With chiles, mint, olive oil, and sea salt. 2) Pumpkin Tamarind Soup: This is actually inspired by Burmese Samusa Soup but with pumpkin, and fresh cabbage and herbs to make it both deep in flavor and light and fresh 3) (Sous Vide) Poached Pear Salad with Blues and Roots: The technique doesn't scream 'soulful' or 'comforting' to me, but why not have perfectly poached and slightly sweet pears to compliment a deep and earthy root vegetable salad? There will be mustard roasted beets, turnips, and red onions dressed in hazelnut oil and red wine vinegar, and served with chunks of our house-cured cashew blue cheese 4) Campenelle Pasta with Mushroom Ragout and End of Summer Vegetables: Featuring @fourstarmushrooms Lions Mane and Oyster Mushrooms, and our Almond Parmesan. This is a burger frying in a pan. Sure doesn’t look like much. But it’s made of only 7 organic whole ingredients, has 15 grams of protein, 10 mg. of calcium, 3 mg. iron, and even has all the B vitamins (yes, even the elusive B12). It’s actually healthy, has chew, still crumbles just enough, sears beautifully, and is f**king delicious. It can be fatty if you want, or healthy and oil free. This thing is revolutionary, and I’m going to make a million of them.

I usually use a standing blender to whip Aquafaba, but this is mesmerizing.
