Fancy Plants Cafe prepared for a busy day today, as we are right off the path on 613 Briar Place, just south of Broadway and Belmont.
We have espresso and coffee, Croissant Breakfast Sandwiches featuring , homemade pastries, cold drinks including Kombucha, and plenty of plant-based breakfast and lunch options, including our Avocado, Tempeh Bacon, and Chickpea Salad wrap, aka, the ABC Wrap.

MORNING PUNK!
Just as some of our staff love to go to each year, we also have a few pirates sailing off to , and I’m excited for , , and of course, the notorious .
I used to go to a vegan coffeeshop in Oakland that was FULL OF PUNKS, the always amazing , which inspired me to open the first vegan coffee shop in Chicago, and the Midwest, Fancy Plants Cafe!
Have fun this weekend ‘yall, and we hope to see some kids with Dr. Martens., plaid bo***ge skirts, and big ass mohawks up in Fancy Plants this weekend for a Vegan Croissant Breakfast Sandwich, some cold brew, or some lunch.

ITS THAT TIME AGAIN!
Fancy Plants Cafe is looking for another great worker to join our team.
You should be excited about getting to know our regular customers, as Fancy Plants is on the cusp of Lakeview and Boystown.
You will be making espresso and tea drinks, and you’ll learn to make some simple plant based food as well.
This isnt just a barista job, food is 50% of the work, and you should be passionate about helping us make it.
We have a lot of amazing regulars that make Fancy Plants Cafe a lively neighborhood hub.
You’ll mostly work with us as a team, but you’ll be working some hours alone too.
You would work 7:00 - 1:00 weekday opening shifts, closing shifts from 11:00 - 5:00, and at least one weekend shift.
Beginning pay after tips is usually around $21/hr before tax, and more if you are experienced.
We are currently looking for part time, about 24 - 32 hours a week.
We’re looking for a candidate that isnt just looking for a few shifts for a short while, but would like to stay with us through the winter and into next summer.

Being in Chicago during Labor Day feels just like being in San Francisco during Burning Man, and they happen at the same time.
You can get a table at all your favorite restaurants. Parking is easy. It feels like the city is yours, and you’re so happy to share it with the other folks who stick around.
Today is so *flipping* beautiful, I’m not surprised Fancy Plants Cafe is staying busy all weekend.
But it’s still easy to grab a seat on our beautiful garden patio, service is quick, and we’re all here for you. :D

It was Wine and Cheese Day, and host Sasha-Ann Simons welcomed Kevin Schuder and sommelier Jordyn Sotelo to the studio for a segment on pairing wines with.... Vegan Cheeses.

We’re also excited to announce VEGAN CHEESEMAKING CLASS #2!
People have been wanting to know how to make our Cashew Burrata, and also to have more hands on experience with our Almond Feta, and our Parmesan as well. We’ll also go over the basics of nut fermentation, and I’ll give you a culture sample to take home.
This is a hands on vegan cheese making class which comes with a recipe book, and cheese to take home, and dinner!
We’ll feast on a vegan cheese plate with burrata, wine soaked feta, and truffle brie, as well as Orzo with Tomato, Feta, Oregano, and Lions Mane Mushroom for our entree.
Have fun learning to make our cultured cashew cream, tangy feta, creamy burrata, and decadent vegan cheese plates.

I got to name drop some Chicago cheese makers (Cheese and Thank You!), promote the 2nd installment of my Vegan Cheesemaking Classes (feta, burrata, and parmesan!), and tease a collaboration dinner I’m doing with The Uncreamery in San Francisco at the end of August.

Fancy Plants Cafe
My name is Kevin Schuder, and I’ve been cooking professionally for about 10 years now, and am the chef/owner of Fancy Plants Catering, and now, Fancy Plants Cafe.
I started out as a very ambitious home chef in Minneapolis, and then turned professional when I moved to San Francisco. My first cooking job was at the vegan fine-dining restaurant Millennium. I learned much there, and then moved on to help Millenniums sommelier open 2 wine bars, as the chef.
I then found myself wanting to learn more, and abandoned the chef role to learn Japanese cooking from Chef Takashi Saito at Izakaya Yuzuki, molecular gastronomy techniques at AQ Restaurant, and a soulful, integral California approach from Amaryll Schwertner at Boulette’s Larder. I also spent a lot of time staging in Bay Area restaurants known for their fermentation, for their pasta, or for their live fire cooking. All of them now have their own cookbooks, and rightly so.
But as I learned more about animal welfare, I decided to leave working for others to cook an all vegan cuisine popup in the evenings, at a place in Oakland that was known for serving meat in the mornings. It was a real gamble. But although it didn’t pay much, I was rich with freedom. I went on to call the popup Veg388.
Around that time, I participated and won the annual Vegan Iron Chef.
From then, I went on to be the chef of the vegan restaurant Citizen Fox, as well as kitfox, our sandwich shop.
From there, I went independent, and started cooking under my own name through Feastly.
We’ve catered a dozen weddings, a dozen fundraisers and benefits for organizations we support, and another 160+ dinners and private parties in the 2 years we’ve been in Chicago.
The future, is that we will be cooking great vegan food in Chicago.
I also worked as a barista for 3 years, and we’ll be combining a fantastic cafe culture with my culinary background.
We have a great team we’re working with, and I’m excited to start a platform for all these different talents to shine. Stay tuned...
