Hello friends, Just Joey here from Bbr. If you have not heard, I have a new food project called Souped Up, cooking and delivering artisan Soups and Chili's. This week's menu includes Grilled Bacon Cheeseburger soup and Modelo Lime Chili. The Grilled Bacon Cheeseburger soup begins a thick, cheesy base stewed with Pabst Blue Ribbon, tomato, potato and mirepoix veggies. We add in fresh grilled 85/15 burgers and you top off the bowl with sharp cheddar, fried potato strings and a bacon/scallion crumble. This week, our Souped Up feature is Chicken Tomato Basil soup. It begins with pulled roasted chicken in a zesty tomato base with orzo, carrots, onion, celery and baked turkey/parsley meatballs and finished with globes of fresh mozzarella. The tomato broth is flavored with Pinot Noir, garlic, basil, fennel, turmeric and cumin. Its the perfect remedy for the snowy blues. I'll be delivering quarts this Thursday and Friday. Hello BBR family, this is my latest project. Hot up Souped Up Chicago for more info:
This week we've flipped a Chicago classic on it's ear as we reinvent the Italian Beef sandwich as a soup! We begin the process as the original by roasting the beef with herbs, garlic and stock until tender. Then we build then soup atop with Giardiniera veggies like carrots, onions, celery and cauliflower and simmer to perfection. Then you add finishing touches that we include on the side: croutons, hot peppers and a crusty dipping bread. I'll be delivering quarts of the Chicago Italian Beef soup this Thursday after 3pm. I have a lot of response in this one so please dm your reservations asap... you dont want to miss this one. Thanks friends... cheers!
