In honor of Black History Month, ipsento is highlighting, Asnekech Thomas, for her work in farming, community, and coffee.

Ethiopia’s only female coffee farmer, miller and exporter, Asnakech Thomas, has made her dream come true. Her passion for great quality and responsibly produced coffee shows on her Amaro Gayo farm and she is able to contribute to the sustainable development of her home region.

Asnakech has grown coffee on her farm for about a decade. She says she’s proud of being able to live in the area where she grew up and use her land for coffee production. Asnakech lived several years in the UK where she also studied agriculture before returning to her homeland of Ethiopia.

She works with a group of around 4,000 co-operating coffee farmers from the local area whose livelihood is a matter of honour for her. She’s developed her own pricing system thanks to which farming is more profitable for the participating farmers and they are able to save some of their income in the bank accounts each of them has after Asnakech persuaded the bank to open a branch in the region.

Good quality coffee also contributes to better incomes. This means the farmers can afford to invest in their farms and develop their community.

Origin: Cooperativa El Porvenir

Discerning Cooperatives like El Porvenir cup through every turn-in, evaluating the pickings they receive from their members, rejecting those that don't pass muster and creating distinct profiles of those approved. The Ayarza Wine Series is a collection of deeply fruited, markedly winey coffees, each processed differently: Washed, honey, and naturally processed. Each of these display intense fruits, slightly fermented character reminiscent of wine, candied sweetness, and depth of body, each through their unique lens.

Cooperativa El Porvenir represents the hard work and dedication of nine producing families and twenty eight farms in the area surrounding Laguna de Ayarza, in South East Guatemala. Farming families include the Lorenzo, Zapata, Aguirre, Najera, Mendez, Sandoval, Ortega, Martinez, and Barrera families. Average growing altitude in this region is 1800 MASL, and coffees are processed at 1500 MASL. Farmers grow red and yellow Catuaí, Pache, and red and yellow Bourbon. Coffees are dried 5-6 days on the patios, then finished in guardióas. Shade trees in this area include broadleaf and conifers.

Ipsento is high traffic, quality-focused cafe. Our mission is to engage people with an immensely satisfying experience. In addition to brilliant coffee, we offer made-to-order sandwiches and a few other small food items. Our 606 location features a full bar at night and hand-crafted donuts all day.

The job requires extensive training. Fully certified baristas take an average of two months to complete their training and pass our certification exam. So, be prepared to make sandwiches, wash dishes, bus tables, smile at customers, and make pourover after pourover until you pass the espresso certification and get to make espresso drinks.

Duties & Responsibilities:
Greet and interact with all customers, working toward our mission to engage people with an immensely satisfying experience

Fulfill all scheduled shifts
Check all work e-mails prior to starting your shift
Complete checklist for your assigned role every day
Adhere to appearance policy at all times
Prepare coffee and tea with acute attention to our standards of quality
Maintain product knowledge regarding all coffee, tea, pastries, and food items, staying up to date on seasonal menu changes, and accurately communicating product information to customers. Respond to questions, orders, and concerns
Properly and gently handle and maintain all coffee brewing equipment
Contribute to store profitability by following cash handling and cash register policies and procedures.
Assist in the development of new employees
Offer relevant ideas and suggestions for improving store operations
Attend scheduled training sessions and staff meetings to advance education on coffee, tea, merchandise, and espresso bar skills.
Other duties as assigned.

Experience:
Retail and/or customer service experience preferred.
Coffee experience recommended.

Alex's first job in food service was in a bakery in his hometown of Bridgman Michigan and he has been working in foodservice ever since. Through his 15+ years in the foodservice industry, Alex has worked in many different kitchens with many different concepts. Alex has worked in such places as churn and burn burger joints, the galley of a United States Navy warship, and even Michelin starred establishments. Alex has benefited from working under some of the countries greatest chefs and now has brought all his knowledge and experience to Ipsento. When Alex is not working at Ipsento, he is conducting events as a private chef around the city of Chicago.....
