Miang kham is a leaf-wrapped hors d’oeuvre that, in addition to its ingredients, binds together the history of two kingdoms, tea culture and the life of one queen.

Pouches of Goodness
Miang kham is made from wrapping various ingredients into wild piper leaves (chaphlu, ชะพลู, Piper sarmentosum, wild betel), composing a single bite parcel.

Each leaf-wrapped parcel is a kaleidoscope of flavors and richness, textures, aromas and sensations. Fresh green-earthy-chlorophyll-herby-tobacco-peppery wild betel leaves enfold bursts of flavor from nutty roasted peanuts and crispy roasted coconut matches, the umami of savory dry shrimp, pungent-sweet diced shallots, small ginger cubes with a warm bite, sour and bitter unpeeled lime cubes, citrusy perfumed diced bitter orange (som za), naughty whole fresh tiny bird’s eye chilies, and small slices of the sharp and sour dtaling bpling (Averrhoa bilimbi, a relative of the carambola/starfuit). All of which is blended with a thick paste of sweet-sour and salty palm sugar and tamarind sauce.

The miang kham takes every taste bud on a fascinating pleasure trip through sweetness, saltiness, sourness, bitterness, and umami, piquancy, sharpness and spiciness, with an array of textures that slowly subside as the journey ends, leading to a familiar post or****ic expression, a smile and the desire for more.

This desire for more is most likely what underlay ML Neuuang Ninrat’s (หม่อมหลวงเนื่อง นิลรัตน์) version of the leaf rolls she calls miang yaak, (“desired for” miang, เมี่ยงอยาก). In a memoir describing her life in the royal courts of Kings Rama V and VI, ML Ninrat utilizes pork crackling, palm sugar, fermented shrimp paste and other common ingredients found in every traditional Thai kitchen to compose the ultimate bite.

SOM TAM or PAPAYA SALAD

Som Tam’s main ingredient is shredded unripe papaya combined with various spices and sauces to make this Traditional Thai Dish delicious, which makes your tastebuds dance in joy. It is originally from the Ethnic Lao people, and you can find it throughout Southeast Asia. You can even find Papaya Salad in any Thai restaurant in the West.

The excellent pair for this Traditional Thai Dish are grilled chicken and glutinous rice; however, if you just want to eat it as a solo meal, it’s also possible.

Khan Tok is both the name of the serving tray as well as the meal itself. As most Thais traditionally ate whilst seated on the floor, the Khan Tok was a tray with a pedestal base to elevate the dishes above floor level. This style of tray can be found in northern as well as northeastern Thai (Isaan). The Khan Tok trays of Chiang Mai can be made of various materials, from humble wicker to exquisite gold gilded wood, but they are all used for the same purpose - to elegantly display an assortment of smaller dishes that complement one another.

Unlike most other regions of Thailand where locals typically prefer steamed jasmine rice, the northern parts of the country favour glutinous or “sticky” rice with their meals. This plays an important role in how Khan Tok is plated, as many of the accompanying dishes and relishes are particularly suited for dipping into and spread over glutinous rice. Aside from rice, here are some of the key items found in Khan Tok.

The Songkran Festival, also known as the Traditional Thai New Year, is usually celebrated in mid-April. It is one of Thailand’s grandest and most important events.

The Songkran Festival is a time when family and friends gather to pay gratitude to elders and visit temples for prayer and offering. Songkran literally means to pass or move into. The Songkran Festival is an amazing event in Thailand which is used to welcome the New Year. During this period, you’ll enjoy fun-filled local entertainments and fun. Depending on which area within Thailand, the celebration can last between 3 to 10 days.

The Songkran Festival is also a period when the Thai people cleanse and pour water mixed with Thai fragrance on Buddha images. The festival also showcases a bathing ritual where the people pour water on the senior Buddhist monks. This process is believed to bring good luck to them. After that, the chief monk will give a sermon and bless those who attend this bathing ritual.

In some areas in Thailand, Buddha images are paraded from one street to the other, allowing Thai people to shower them with water. The young people pay gratitude and also show a sign of respect to elders in a sacred ritual, which involves pouring down scented water on their hands and also giving them new clothes.

This water festival in Thailand involves merry making, presenting offerings to monks, releasing birds and fishes into river, paying respect to elders, building sand pagodas, listening to sermons and, more importantly, splashing of water. This is believed to bring longevity, good health and prosperity.

In several cities across the country, locals celebrate the Songkran festival by splashing water over themselves with a word of blessing. Most young Thai people use pump-action water guns and pump buckets to soak themselves up.

This water festival is one of the most loved and popular events in Thailand. It is the festival that offers loads of excitement while welcoming the traditional Thai New Year with remarkable water splashes and getting all soaked up. The Songkran festival promises to be quite refreshing and fun.
