Our woman-owned bakery in Chicago, IL, helps customers thrive while enjoying the very best in breads, pastries, food, and drinks. We source all ingredients locally — including organic milk and milk substitutes, organic syrups, local produce, fair-trade coffee, and more! Unlike store bought brands, our granola is made in-house by our Pilsen bakehouse team using locally sourced ingredients. Revel in all its glory. This is our Pain de Mie, also known as a Pullman Loaf. The name comes from very literal terms. “Pain” is the French word for “bread”, and “la mie” is the soft part of the bread, called the crumb in English.

We love this bread because of its versatile uses. Stellar for sandwiches, french toast, or just on its own with a little salted butter and jam. (Available for wholesale and pick-up)

Our buns have 7 ingredients and THAT’S IT. You might be asking, really? Yes. Really. Don’t believe us? Try it for yourself, and on top of it here’s the ingredients listed out. Our standards and attention to detail are that of what you would expect from a specialty coffee shop and the tips you would expect from a bar or restaurant!

We need EXPERIENCED baristas, with ~2 years of specialty coffee background.

The Spoke & Bird is growing and looking for Baristas and FOH Leads - ideally all in one - to help us toward our quest of coffee excellence and exceptional service.

We use Counter Culture Coffee single-origin coffees, blends, and espresso. All Spoke & Bird employees are encouraged to enroll in Counter Culture's Counter coffee education courses (which we'll pay for!) and work toward the Barista Certification.

You'll welcome all guests to the store and engage them in discussion of coffee, tea, and food offerings. Learn to make and serve all beverages on our menu in a timely fashion. Complete daily and weekly side work and cleaning duties.
