At Pares Balta, world class sparkling wines begin with a deep knowledge of the land the family has farmed organically since 1790. That tradition continues today; since 2012 the entire estate has been certified .

Local grapes, , and ·lo are the backbone of Pares Balta's Brut Cava but they are not the only varieties used. The beautiful and rare Rosé Cava blends with Parellada, Macabeo.

Micro-cuvées explore vintage blends of Xarel-lo, and and the current release is a decade old; no surprise from a family with more than 2 centuries of winemaking history.

What do you get when you cross a Spain loving Master of Wine with an insatiably curious, remarkably talented winemaker?

Today the answer is ’s Mencia / Cab Franc rose from OR.

« Made from the first Mencia vines planted in the Willamette Valley in 2017. As these vines mature, and provide us with more fruit each year, we love to explore what this variety is capable of here in this valley. In 2021, the low yields and warmth of the vintage gave us small deeply colored berries, thus when cold-soaked the Mencia on its skins for just a few days the color pickup was intense! The Mencia was pressed into neutral oak barrels for fermentation to dryness.

Meanwhile, our young vines of Cabernet franc are incredibly precocious and in 2020 we made part of the block into a Cabernet franc Pet-Nat Rose, which we loved. Alas, in 2021 supply chain shortages of sparkling glass meant that our Cabernet franc rose fermented to dryness and could not be made into a sparkling wine. An inspired evening in late November led us to experimenting with blends and we found that the pale and juicy Cabernet franc rose was the perfect partner for our deeply pigmented and intense Mencia rose.

Strong believers that blends can be great wines some varieties are better this way and more than just the sum of their parts we decided that in 2021 this inspired blend would be our Rose of the vintage! »

Landing Monday… small quantities of the magical wines of Julien Brocard. As it is Chablis, it is of course limited, but don’t miss out. These are from biodynamic parcels across the Brocard family holdings, from Petit Chablis to Grand Cru and they are a beautiful combination of elegance and power.

Winemaker Erich Berg returns to Chicago where he started in wine almost 20 years ago working on the floor at Croft on Wells, among others.

Today, after making wine at Domaine Serene and with Brianne Day at Day Wines, he has his own brand with a unique take on diverse and delicious grapes from the Pacific Northwest at Ricochet Wine Company.

Behind Ricochet Wine
To ricochet is to bounce back. Not always in a predictable direction or velocity... Life is full of metaphoric ricochets.

The Ricochet Wine Company was founded to advance two agendas:

1) Make killer, authentic, sophisticated, and honest wine that is accessible to a wide spectrum of folks. Wine is community, after all.

2) Give back to the community by donating 5% of sales to local and regional non-profit organizations that specialize in areas that help people bounce back from difficult situations. Again, wine is community.

Ricochet Wine Company was founded in 2018. Only two tons processed–a ton of pinot noir; a ton of gruner veltliner. Now, three years later, Ricochet is up to 12 tons (still super tiny), producing Pinot Noir, Tempranillo, Mourvedre Rose, Pinot Blanc, Gruner Veltliner, and a Pet-Nat.

This is primarily a delivery job. We deliver wine to customers in Chicago and the Suburbs from Tuesday to Friday. 20 to 40 stops are made in a day on a given route with strict and specific delivery windows. Punctuality and excellent customer interaction is a requirement.

No CDL required. 21+ age requirement.

Company provides: Sprinter Van, fuel, delivery dollies.

QUALIFICATIONS:Must have at least 12 months experience of verifiable commercial driving within the last 3 years (any vehicle). Pizza delivery, School bus, Uber, Lyft, Cab drivers qualify for the job. Intimate knowledge of city and surrounding suburbs a strong plus.

Overtime paid at time-and-a-half $25.50 per hour· Health Benefits: Medical, Dental, Vision available after 90 days of employment· Paid Time Off (PTO) of at least two weeks (80 hours) per year for full-time.

Need a clean driving record.Need a clean drug screen, clean criminal background check.

8-12 hour shifts· 4 days per week full-time· Drivers will load their vans every morning.· Drivers will deliver cases of wine (40+ lbs each) to business across the city and suburbs.· Drivers need to be able to lift and carry a case of wine and manuever a dolly loaded with multiple cases. · Drivers may need to walk down flights of stairs with loaded dolly to deliver.· Drivers will drive cargo vans, averaging 60-120 miles per day,round trip. Longer trips and days are posible.

Warehouse work will include pulling orders for the next day, receiving inbound shipments, inventory counting, cleaning.

Collecting signed invoices and returning them to the warehouse each day is required.

Health insurance offered after 90 day trial period.

Everyone in our company is vaccinated and that will continue to be true.

One Year Later: How U.S. Winemakers Averted Disaster 04/15/2021

Last fall was a nadir for many of us in the wine industry but it was hardest on our west coast partners and friends whose livelihoods and indeed whose lives were at times threatened by smoke and fire. From those ashes, some good things have sprung and we are unendingly grateful for all of our customers who are supporting the wines made during this terrible time.

Over the past few nights, our friends in France, particularly in the Loire have suffered tremendously and this year's crop is in doubt in many places.

At Domaine Béatrice et Pascal Lambert they've been using a new overhead watering system to protect the young shoots and have some hope that it's worked. The first picture looks devastating but it's actually quite positive. The second is their newest wine that just landed in Chicago yesterday, 100% Pur Jus, a carbonic maceration Cab Franc. President Organic Wine Association
Esther is the president of the Spanish Organic Wine Association (founded in 2014) and third-generation winemaker of Bodegas Pinuaga. The Spanish Organic Wine Association is comprised of 35 small and medium-sized organic wineries, which lead the organic wine industry with over 27% of Spain planted with organic vineyards. Its members make everything from cava and fortified wines to reds, whites, and rosés. Esther grew up around the Pinuaga vineyards, which date back to the 1940s, with her grandfather, ultimately leading her to work with the family and study oenology in Madrid, Spain. She is a leading voice for Spanish organic viticulture.

Phil Sareil
Importer & François Selections
Phil Sareil began his career in wine in 1987 working in Kermit Lynch’s now famous Berkeley wine shop. In 1988, he tasted Marcel Lapierre’s wine at his uncle’s house in France, and after he showed the wine to Kermit, he began importing the wine in 1989. He worked the harvest at Domaine Lapierre in 1997, and after that moved to New York to work in wholesale wine distribution. During that time he worked for Winebow, Polaner Selections, and finally at Kermit Lynch as a regional sales manager. After 25 years in the trade, Phil is as passionate as ever about wine and Jenny & François Selections, where he sources organic, biodynamic, and sustainable wines from Spain and other countries for the portfolio.
