We would like to thank everyone who attended the premiere of 'Chicago Fashion Through a Chicago Lens,' a collaboration between The Curio and NoMI Gallery. Aligning with the start of Chicago's first-ever Fashion Week, this event celebrated the city's vibrant fashion community and creative spirit.
Inspired by the colors and textures of the featured photography, NoMI Kitchen served a series of hors d'oeuvres. Emphasizing the iconic black-and-white edits of fashion photography, the Caviar Tart offered a decadent presentation that mimicked the unique fabrics featured.
Our Roasted Beet & Chèvre Crostini drew inspiration from fashion's other color palette - bold and bright. This playful bite featured a delightful contrast of Brunoise Red & Golden Beets and handcrafted coral tuile, also representing textures in the featured fashions.

🍴 Executive Chef: Terence Zubieta
- Born in the Philippines, Terence's culinary identity takes inspiration from his homeland where he infuses dishes with unique elements you don’t often find in Chicago. He joined the team in 2019 and has quickly ascended the ranks, his culinary vision mirrors the diverse and sophisticated palate of Park Hyatt Chicago.
🍴 Chef de Cuisine: Shane Cawley
- Chef Shane devoted five years to the United States Marine Corps, then earned Associate of Arts degrees from both Hawaii Pacific University and the prestigious Culinary Institute of America in New York. With his honed skills, Chef Shane moved across the globe to Sydney, Australia, where he joined the renowned 2 Hat restaurant, Aria, before joining the esteemed NoMI team where he oversees creative culinary direction and menu development.
🍴 Executive Pastry Chef: Solange Austin
- Solange graduated from Le Cordon Bleu in Orlando, then moved to Colorado to launch the next step in her career at Park Hyatt Beaver Creek before joining the team at Park Hyatt Chicago. With childhood inspiration at her helm and a passion for experimentation, Solange continues to expand on her creative approach that infuses unexpected flavors into traditional desserts.

Our Story
NoMI Kitchen features modern French cuisine, with a bustling show kitchen and floor-to-ceiling windows overlooking Michigan Avenue. Executive Chef Eric Damidot presents bright and approachable menus, pulling from his childhood in southern France and his classic training to reimagine traditional French cuisine. Pair distinct dishes with wines from our extensive global collection curated by NoMI sommelier Jillian Riley.
The Lounge, an elegant bar on the seventh floor of Park Hyatt, serves up the best sushi in Chicago. Claim a seat at the six-seat sushi bar for a personalized omakase experience. In addition to sushi, a menu of items served from NoMI Kitchen is also on offer. Gather with friends in the posh bar and enjoy drinks from an ever evolving menu of cocktails, wines and craft beers.
