Today is National Popcorn Day and things were popping at the Summit. To mark the day, we brought in Garrett’s popcorn for our clients.
Chef Jesus Beiza chose an Asian-themed lunch for our special group today at Summit. Salmon in a savory yellow curry sauce and just-right-spicy skirt steak with soy and sriracha was complimented by stir-fried vegetables, jasmine rice with ginger, vegetarian egg rolls and three salad choices -- green lettuce, garbanzo bean and quinoa. Let's just say all this combined to create one very happy client. We just might have heard them say, "we're never going back to our office."

We're testing recipes at Summit this week with a focus on vegetarian options. Today we enjoyed the delightful simplicity of 4 ingredient zucchini pie with a green lettuce side salad -- a perfect summer lunch. We hope you give it a try.
Summit 4 Ingredient Vegetarian Zucchini Pie
Ingredients
- Pie crust (store bought or homemade)
- 2 Cups Greek Yogurt
- 8 Eggs
- 3-4 Zucchini (grated)
Instructions
- Arrange pie crust in baking pan; trim excess crust
- Mix eggs, yogurt and grated zucchini; season with salt and pepper to taste
- Pour the filling into the pie crust
- Bake in 375 degree oven for about 45 minutes
- Remove from oven and let cool
Enjoy!

Today we sampled Chef Jesus’ Liver Cleanse juice. It’s easy to make and tastes great.
In your blender or juicer, add peeled sections fresh grapefruit and lime with half a cup of water, a tablespoon of honey and a tablespoon of ground turmeric.

Holiday treats are on our mind these days. Summit Chicago's Chef Amy is sharing one of her favorites -- Dark Chocolate Espresso Budino. Give it a try and let us know your experience.
DARK CHOCOLATE-ESPRESSO BUDINO
Yield: 4 servings
Ingredients
1 tablespoon cocoa powder
3 tablespoons cornstarch
1 teaspoon espresso powder
1/2 teaspoon fine kosher salt
3 1/2 ounces (1/2 cup) granulated sugar
1 teaspoon vanilla bean paste
4 large yolks
16 ounces (2 cups) whole milk
8 ounces (1 cup) heavy whipping cream
4 ounces chopped semisweet chocolate
2 tablespoons unsalted butter
For the whipped cream: 4 ounces (1/2 cup) heavy whipping cream
1 tablespoon granulated sugar
1/2 teaspoon vanilla bean paste
Chocolate curls, for garnish
Preparation
1. In a medium saucepan off the heat, add the cocoa, corn starch, espresso powder, salt, sugar, vanilla and egg yolks; whisk to combine.
2. Slowly add the milk and cream; whisk until the mixture is smooth. Bring to a simmer over medium heat, whisking constantly until the custard is very thick, about 5 minutes.
3. Remove from the heat, add the chopped chocolate and butter; whisk until smooth. Divide the custard into 4 coffee cups or ramekins.
4. Set aside to cool to room temperature and then cover with plastic wrap and refrigerate until chilled.
5. To prepare the whipped cream: Combine the cream, sugar and vanilla in a bowl and whisk until soft peaks form. Transfer the cream to a piping bag with a medium tip.
6. Garnish with whipped cream and chocolate curls. Serve immediately.
7. For a holiday twist, add 2 ounces of peppermint schnapps and sprinkle the top with crushed candy canes.

Ice Box Cake with Oreo Thins
Ingredients
• 2 ½ cups heavy cream, cold
• ½ cup powdered sugar
• 1 tsp vanilla extract
• 1 package Oreo thins
Preparation
1. Use a hand mixer or stand mixer to whip heavy cream, sugar and vanilla until stiff peaks form
2. Spread a layer of whipped cream on the bottom of an 8” spring form pan
3. Top with an even layer of Oreo cookies
4. Spread whipped cream on top of cookies and repeat until you have filled up the pan
5. Refrigerate cake overnight
6. Cut into desired slices and garnish with cocoa powder or crushed cookies
Serves 8
