We have leftover banana puree from banana syrup so it went into ice cream for the team! Wow is this good. Eggless.
Also horchata ice cream from leftovers too
We had a request for blue syrup. Yes we can do that! Pea Flower was awesome but anything acidic reacts with the color and it turns purple. So we used blue food coloring and 2-1 rich cane sugar syrup. We can make this plain or steeped with fresh orange peel for a day or other steep with other flavor

We already make a Bananas Foster Syrup and had a bunch of banana puree that we made left so tested out a plain Banana Syrup. Turned out great!! We couldnt help thinking about Paul McGee Lost Lake Banana Daiquiris so had to make a couple last night. Chefs kiss. Muahh! Beautiful!
California Dip
Anyone want dried Grapefruit Peel? We have a lot. Testing a grapefruit salt for ri***ng Palomas and Salty dogs and other drinks too! Leave a comment below. š

Appelās Cordials started with creating a Lime Juice Cordial. Wash and peel limes, make an oleo saccharum of lime peel, make lime juice and cane sugar syrup. Cool. Add oleo. Rest. Strain. Simple ingredients, but two days to make
Classic Gimlet Cocktail
2 oz London Dry Gin
Ā½ oz Lime Cordial
Shake or stir
Serve up in a chilled cocktail glass or on rocks. Garnish optional. Try a splash of dry vermouth

Itās Blood Orange Season in North America. Appelās Blood Orange Cordial is Blood orange juice, lemon juice, cane sugar, orange peel oleo saccharum, pinch of citric acid for balance. No water.

15 hour onion marmalade. Fill a dutch oven with about 12 diced Vidalia or sweet onions, some olive oil, cracked black pepper, pinch of salt, splash of balsamic. Cook covered. Then uncovered. Such an amazing flavor to add to grilled meats and sausages, hot fogs, beans, bagels n cream cheese, pizza, makes the best California dip. Lasts a year in fridge. š
Our Spiced Apple Cider Syrup is a take on the old school spiced apples that were always part of standard salad bar fare at Wisconsin Supper Clubs. We use hibiscus for the red color.
Try it in a Wisconsin Style Old Fashioned with Brandy or Calvados or both, chilled club soda, bitters and a slice of orange!
When the Lemon Cordial is done, we dry the spent lemon peels for later use in other syrups or creative ideas.
Appelās Lemon Cordial is really a blend of Lemon Sour (cane sugar and lemon juice) and Lemon Oleo Saccharum (Macerated lemon peel and sugar)
One of my favorite cocktails is a Three Penny Ice
2 oz London Dry Gin75-1oz Lemon Cordial5 oz Dry Vermouth
Shake it hard. Its like a gin lemon italian ice on the rocks..or up
