My youngest son Joshua is getting ready to go to College! Mommy will do whatever it takes for you to succeed in your future. Money will never be an issue even though I have to do it all by myself when nobody is willing to! Those who know my struggles and know what I’m going through know! God is awesome and he will provide!!! ❤️

Lunch with an awesome friend (old co-worker Arthell Davis)! You listened to me when I needed to talk to someone, you helped me with things that had nothing to do with our job, you pushed me to do things that I never thought I could accomplish and you made me learn how to love myself first and know that I was an amazing woman! Snix Snacks will be at Kelvin Park High School from 11:30am to 1pm then I will head to Independence Park from 2pm to 6pm. My son is a teacher there and he asks me if I could go. What a mother does for their children… no matter how old they are.

For years I worked with a woman named Yolanda who I quickly became close friends with. Yolanda was Puerto Rican and introduced me to some of the best food I have ever tasted. Yolanda has passed but I think of her often. She used to take me for Jibarito Sandwiches at a place by her house in Humboldt Park. A jibarito is a sandwich made with flattened, fried green plantains, that’s used as the bread. It has a tender steak filling, served with a garlic mayonnaise, lettuce, onion, tomato and a slice of melty cheese. The plantains add to the sandwich with a savory, sweet crispy flavor and texture. I haven’t had one like I remember Yolanda taking me for in YEARS. That is until today when I tried Snix Snacks food truck located right in Independence Park on Chicago’s north side at Iriving and Pulaski. The food that this woman is serving up out of her trailer is 5 star. We also tried several other things that I’ll share in a separate post, but this Jibarito deserved its own post. I wish Yolanda was still with me so I could take her for this. She would love it.
