We always have some fresh greens, washed, chopped and ready to go! Makes having a salad so much easier. The proteins vary, but a can of tuna is an easy go-to! We like to add Primal Kitchen avocado mayo with a splash of Primal Kitchen buffalo sauce and pickled anything, into the mix. This, along with a slice of nut and seed bread is perfecto! Blood Glucose friendly too!!

Can Your Granola do That?
Witzi’s was created to meet a need. Specifically, a granola free from grain, gluten, added oils and excess/multiple sugars. The hope was to create a recipe so good, my kids would eat it!
We think we nailed it!
We do get questions about the price, to which we kindly remind people Witzi’s is not like typical granolas. We don’t use grains (including oats), which may be filling and bake-up nicely, but they can’t compare to nutrient-rich nuts, like almonds, walnuts, pecans. In fact, our bodies may respond to processed grains just like they do to sugar!

Why does this matter?
Research is exploding around the benefits of minimizing blood glucose spikes.

This wasn’t the goal when creating Witzi’s. But it just makes sense. Everybody responds differently to this foods, but too many sugars & carbs in the absence of fat and fiber are likely to cause a glucose spike.📈
The results in the image are my body’s response using my continuous glucose monitor (CGM) and comparing a serving of 2 granolas. Notice the increased rise in my blood glucose (blue line) compared to the relatively flat line (white line) from a serving of Witzi’s. Pretty different, wouldn’t you say?!

Here’s a look at the blood glucose impact from one serving of Witzi’s Original Granola. A score of 8 from my continuous glucose monitor is great! Not surprising really, as there are no highly processed flours, oats or other sugary fruits in Witzi’s.
The granola you can feel good about!
When Witzi’s began, we knew it was different. A granola without oats?! While there are other grain free granolas, this is still a perplexing idea to people.
Just because something has always been one way, doesn’t mean a new way is wrong.
But it’s not only a lack of oats that makes Witzi’s different.
It’s:
💚the use of healthy nuts and seeds, rich in nutrition.
💚the pre-soaking of nuts to increase digestibility.
💚the slow and steady dehydration method, removing moisture without the damaging effects from ultra-hot ovens.

This seed mixture (chia, h**p, flax) mixed with almond milk is a major upgrade from oats. Many people can’t tolerate oats. 🙋🏻♀️
With minimal prep (setting the seeds and milk aside overnight or several hours) makes for a creamy, thick porridge-like texture. Rich in omega 3’s, fiber and protein~it provides a balanced base to start the day. We love mixing in some full fat yogurt, berries, nut butter & Witzi’s granola. So many variations.

The smoothie has blueberries, a small chunk of banana, homemade cacao/almond nut milk, vanilla protein powder, peanut butter & no oats (4 seed combo). We made it early this morning in the Vitamix. We added yogurt to it before serving and chose Witzi’s Chocolate Honeyberry as the topper. It was tough choosing between Banana Berry and Chocolate Honeyberry, but this combo slays.

Pumpkin Spice Waffles on this Sunday!
This time, we put the granola in the batter instead of on top of the finished waffle. The change in texture is so good. We also added protein powder into the mix and into the yogurt on top ~ helps to balance out the flours. Some basic scrambled eggs with greens made for a yummy and satisfying start!
Here we go.
The transition from summer to fall. Just love this change. It’s such a great time to draw-in, reflect, and be “ok” with resting a little more.
Food desires shift too! Bring on the root veggies, savory flavors & soups!

Easy Frittata!
This has been a regular part of the weekly meal planning. It’s nice to make at the beginning of the week and have it for a few mornings OR towards the end of the week for less-work mornings on the weekends (and you can literally use any veggies left in your fridge:). Take a look at the blood sugar spike! This is the same meal I had 2 days ago with limited impact on my blood sugar. The only change - a swap from Witzi’s Lemon Raspberry Granola with a top selling oat-based granola. Witzi’s has fewer carbs, less sugar and more fat~which helps to reduce a blood sugar spike. The data is helpful to SEE what is happening inside your cells. And, I find it encouraging to know small changes (like a topping swap) can have big effects. 😊

Blueberries in and on this smoothie!
Love blueberries! Especially this time of year. Rich in antioxidants, polyphenols and flavor. This was the first time trying frozen riced broccoli 🥦 in a smoothie. Love the way it added thickness and fiber without being overpowering at all!
We also mixed in riced cauliflower, vanilla goat whey powder, almond butter, ground flax seed, h**p hearts, cinnamon & sea salt.
Witzi’s Banana Berry on top-no brainer.

Try starting the day this way!
Make ahead frittata makes is so much easier. We used onion, chives, bell pepper, spinach & egg. A sprinkle of fresh micro-greens for some added plant power and avocado for good healthy fats!

Thai Coconut Curry Soup!
Oddly cool last night-so nice to eat outside. This soup was super tasty while being so simple-love that! We made enough for lunches today~can’t wait to eat it again lol! We topped with Witzi’s Golden~🔥

Recipe:
2 T avocado oil
1/2 medium onion - thinly sliced
3 cloves garlic
1 tsp ginger, grated
1/4 cup red curry paste (just discovered Mike’s Organic Curry Love)
1 red pepper - thinly sliced
2 carrots - thinly sliced
1 medium zucchini - thinly sliced
4 cups chicken or veggie broth
1 13.5oz full fat coconut milk
3 T coconut aminos
1 LB ground turkey or chicken (cooked)
2 cups broccoli florets
1 tsp salt to taste
Juice from one lime
Toppers:
Cilantro
Witzi’s Golden
Coconut flakes
1. Heat oil over medium heat. Once hot add the onion, garlic and ginger. Cookl for until onions soften (about 2 min), then add the paste - and stir well for another minute.
2. Add the veggies and sauce for 3-4 minutes.
3. Add the broth, coconut milk and coconut aminos. Turn up the het and bring to simmer.
4. Add broccoli and cooked turkey or chicken - and simmer until the broccoli is a bright green color.
5. Season to taste with salt & add lime juice
6. Top with coconut flakes, avocado, cilantro and Witzi’s Golden

Have you tried Witzi’s Banana Berry Granola?
This flavor is so simple, but so, so good. I remember the taste-testing and the testers vividly. It came together pretty quickly actually~natural, real ingredients tend to do that:) But the surprise was the change in texture that came along with using real bananas. Thicker, smoother and almost buttery. And the blueberry flavor just popped. Since it’s launch at farmers markets, it has been a consistent favorite. And until Chocolate Honeyberry came along, the only one with bananas. 🍌🫐
Give it a try! It’s great on yogurt, hot cereal, smoothie bowls, salad or a great travel snack!
Do you ever get bored with your salads?
Try being adventurous with toppings that add interest, texture and flavor. It’s fun to add granola for the crunch, good fats from nuts and contrast to the dressing or proteins.
It’s also nice to make a big chop salad, tuna/salmon salad and hard-boiled eggs ahead of time, so you can pull it together quickly for a few rounds! Just assemble and splash on dressing.
We never have salads with our granola around here😍

Each batch of granola produces some waste. A friend coined it “dust” and she loves it. But we NEVER waste it.
My mom was a child during the depression, and she was forever frugal because of it. I inherited this and when my kids witness me doing things like, diluting soap or salad dressing, they call me “Virginia”, my mom’s name:)
But these little balls are so easy and perfect little treats. We add to the granola dust, a runnier nut butter, more seeds, protein powder and even a roll through coconut or cinnamon. Point is, don’t waste, create!

Love lunching outdoors this time of year! Perfect summer day in CLE! And, all the things in the fridge sort of just worked here. Zucchini was already spiralized, cowboy caviar (made for women’s meeting the day before), and sprouts, avocado, kale and Witzi’s of some kind-always in the fridge!
