Kaiseki
One of the biggest reasons many people visit Japan is its cuisine. Japan boasts unique food culture, including popular sushi and ramen, but a traditional Japanese dish called Kaiseki (懐石) represents beautiful elements of Japanese food culture. Kaiseki refers to a specific type of Japanese traditional cuisine that is generally served on special occasions. And when you have Kaiseki cuisine, some understanding of basic manners will be required. If you’ve been to Japan, you may have eaten a kaiseki meal. You definitely wouldn’t forget it, that’s for sure. Simply put, a kaiseki meal is a traditional Japanese multi-course feast for both the eyes and the stomach. With sometimes up to a dozen or more courses, kaiseki is equal parts a meal and a spectacle. Some have likened kaiseki to actually ‘eating art’; indeed, the extraordinary care that has gone into not only cooking the food but also arranging it just so can make it feel like you’ve been served a painting instead of a dish.

Kaiseki is booming cuisine. Last month, a six course kaiseki was a hit at the Dallas Fish Market, Minnesota opened its first kaiseki restaurant in August, and Michelin-star chef Toru Okuda is setting up shop in New York’s Chelsea according to reports last week.

Since the Edo period (1603-1868), all manner of produce from across Japan have passed through the hub of Osaka, and over time, the city has accumulated a rich trove of Japanese cuisine. The kanji characters used to write "kaiseki" literally mean "breast-pocket stone". These kanji are thought to have been incorporated by Sen no Rikyū (1522–1591), to indicate the frugal meal served in the austere style of chanoyu (Japanese tea ceremony). The idea came from the practice where Zen monks would ward off hunger by putting warm stones into the front folds of their robes, near their stomachs.
