Chopped Kale Salad 🥗
We are harvesting the last of our kale to make room for fall crops. One of my favorite ways to use kale is in a chopped kale salad topped with our chicken from the farm. It makes a tasty side or light lunch made with pine nuts, dried currants, and shredded parmigiano reggiano cheese in a simple lemon & olive oil dressing, with a little bit of everything in each forkful! Salad
▢ 2 medium bunches kale (stems removed) finely chopped (about 8 cups) - I use a food processor...it's quick and easy
▢ 1 cup parmigiano reggiano cheese grated
▢ ¾ cup pine nuts
▢ ¾ cup dried currants
Dressing
▢ ⅓ cup lemon juice freshly squeezed
▢ ⅓ cup olive oil
▢ ½ teaspoon course celtic sea salt
In a large salad bowl, combine the chopped kale, cheese, pine nuts and currants. In a jar with a tight fitting lid, combine the ingredients for the dressing, then shake well. Pour the dressing over the salad ingredients and toss to coat.

It’s so fun to see what’s popping up in the market garden. Today, we harvested a few carrots, snow peas, and baby kale for dinner tonight. Oh! And our broccoli is growing! I think tonight we’ll enjoy a kale salad with the carrots and peas.
After a year and half of planning, praying, preparing our hearts, it was so exciting to step outside this morning and see the first phase of our project underway! We can’t wait to be able to share this space with others.
We went into this day knowing that we would be processing our chickens today. Going into it, all our hearts I think were heavy. We prayed together as a team before we started. The process was humbling, and hard. We are all grateful, and thankful for this experience. There is a great respect for the animals when you know where your food comes from. Thank you everyone who supported us on this first batch!

Must be punctual, able to w**d wack, run a chain saw, and lawn mower. Able to work independently, and also as a team. Must be teachable and able to follow instructions.
Must be able to fix things, lift/carry 50 # bags of feed, and willing to jump in and do what it takes to get the job done!
Experience with sheep, cattle, and electric fences is a plus.
Full-time Salary plus benefits!

✨Hello September! The summer flew by fast and honey season is almost over. It’s almost time for the girls to start slowing down. This season was an interesting one for us. We were hopeful to have honey this year and the summer heat was not in our favor. It was too hot!!
Everyone seems to be doing fine. The girls are storing honey for the winter. I may have stole a little taste 🍯 😊!
We did lose another queen and so we had to combine the hive that you see behind me. There’s a trick to it though.
Newspaper 📰. You take a piece of newspaper and place it in between the two boxes. Once the bees eat through the newspaper to get to each other they’ve basically accepted each other as their sisters.🐝

We’ve had a number of folks asking how to purchase our vegetables that are coming out of the market garden, and it’s SUPER simple!
1. Shop our selection of vegetables online.

We walk through our farm twice a week and take stock of which vegetables are perfect & ready to harvest. We then update the Virtual Farmstand every Sunday and Wednesday. This way we only harvest what is ordered, so there is zero food waste on our farm. It also means that you get the freshest food possible.
2. Choose how & when to receive your order.
During checkout, you have two choices on how to receive your order: pickup your order from our farm in Columbia, TN or choose one of our drop-off locations. Then you will choose when to receive your order: we have two pickup windows per week, Wednesday 4pm -7pm, Sunday 10am - 2pm.
3. Get ready to gather your veggies.
We have gotten your order and we harvest your food fresh the day of or day before your order is ready. We then pack it into paper bags and deliver it to your drop-off location or leave it out for you to pickup from the farm in Columbia, TN.
It’s that simple!

These birds are different! Their taste, their texture, and their lives are worlds away from the standard commercial chicken.
Our Freedom Rangers will grow to 10 weeks (instead of the 4-6 weeks from commercial farms) .
These chickens get moved to fresh grass daily. They experience sunshine, bugs, and grass like a chicken is supposed to. Supplemented with Organic NON-GMO feed. They enjoy a super happy healthy life.
Pasture raised chickens are known to be lower in fat and higher in Omega-3’s, also about 50% more vitamin A, 30% less saturated fat, and 28% fewer calories helping to make a far more nutritional product than you’ll find in a store.
We process them on-farm and the utmost care is taken in cleanliness, sanitation, and animal welfare.
