Over the years, my page has transformed from showcasing vintage and antiques at my store, 'urban farmhouse' in Thornville, Ohio, to a space where I've bared my soul, sharing my weight loss journey in the hopes of inspiring others facing similar struggles.
However, the negativity that has crept in has taken its toll. Each "drive-by" negative comment (most I delete) chips away at the positivity I strive to maintain here. While I cherish the opportunity to uplift and support, I find myself needing to prioritize my own inner peace.

Hope all my Midwest friends are safe this morning. It's was pretty touch and go here in Ohio last night. Last week we had the largest hail I've ever seen, tornadoes yesterday and it may snow this week. March was definitely out like a lion and running through the first part of April like a bull in a china shop.

Fajita Stuffed Chicken
Makes 8 servings
Per serving
1 Leaner protein
1 vegetable
3 condiments
1 fat
Non-stick pan spray
1 red pepper, diced
1 green pepper, diced
1 yellow pepper, diced
1 cup green onion, diced
1/2 teaspoon kosher salt
1 teaspoon freshly ground black pepper
4 ounces low fat cream cheese
1 cup shredded low fat cheddar cheese
1 cup diced low fat pepper jack cheese
3 1/3 pound boneless skinless chicken breasts
1/2 teaspoon salt
1 teaspoon chili powder
2 teaspoons cumin
1 teaspoon garlic powder
2 Tablespoons canola oil (for chicken)
3 tablespoons Salsa
PREPARATION
Heat the canola oil in a pan over high heat. Cook the peppers, onion, salt, and pepper until soft. Transfer the cooked veggies to a bowl.
In the same bowl, mix in the cream cheese, cheddar, and pepper jack, stirring until evenly incorporated. Set aside.
In a separate bowl, combine the chicken with the salt, chili powder, cumin, and garlic powder, evenly distributing the spices over the chicken.
On a cutting board, slice a pocket in the chicken horizontally and fill the pocket with a heaping spoonful of the veggie mixture. Press the edges of the chicken together to seal in the filling. Repeat with the remaining chicken.
Heat the canola oil in a non-stick pan over medium heat. Cook the stuffed chicken for five minutes on each side, until cheese is melted and chicken is cooked through.
Serve with salsa.

Recipe yields 6 servings
Per serving: 1L | 1.5G | 3C
Ingredients:
2 lb lean raw steak
1/3 cup sliced onion
2 bell peppers
3 cloves garlic
2 tbsp apple cider vinegar
3 cups beef broth
1, 14-oz can fire-roasted tomatoes
2 bay leaves
1 tbsp cumin
2 jalapeno peppers
1 tbsp tomato paste
Directions:
Lightly coat a large pot with olive oil spray and heat over high until hot. Trim steak of any visible fat and cut crosswise into 3 pieces.
Add to pot.
Brown meat on all sides, approximately 5 minutes.
Transfer to plate and set aside. Spray pan again with olive oil spray and heat on high until hot.
Add onion, bell pepper and garlic and stir until they begin to brown. Add vinegar and stir, scraping up any brown bits from bottom of pan.
Add broth and diced roasted tomatoes. Bring to boil over high heat. Add bay leaves, cumin, diced jalapeno and tomato paste. Stir until all ingredients are blended; return steak to the pot.
Bring mixture back up to a boil, cover, lower the heat and simmer until the meat is very tender. This will take approximately 2-1/2 hours.
When meat is done, shred it gently with a fork, so it is separated into small pieces. If mixture is too runny or loose, bring it all back up to a boil and reduce.
I resemble that statement.

Monday night I watched the special Oprah Winfrey did on Medically Supported Weight Loss.
Question:
For the people who are getting the shot from the doctor to lose weight, do you have to stay on the shot continually for the rest of your life, or once you get off the shot do you have to learn healthy habits to maintain your weight loss?
Also, what about muscle loss? I’ve heard that up to 50% of the weight lost may be muscle.
Anyone have an answer to these or been down that road?

Before she mastered the art of French cooking, Julia Child cooked up shark repellent while working for the precursor to the CIA as a covert operative during World War II. Sharks kept unintentionally setting off underwater explosives meant for German U-boats — until Child came up with an inventive recipe that saved the day.
Last July I picked up painting again. Quite by accident while vacationing with friends. One is an incredibly talented artist and art teacher and she had brought supplies with her. We didn't several afternoons painting on the porch.
Since then I've taken 3 classes and try to print every day. Only this time it's with watercolor instead of painting furniture or using craft paints on slate (both a previous life at "urban farmhouse" in Thornville.
I'm head over heels in love with it!! Please keep on mind... For every one that turns out there are a dozen in the "mistake" pile that you don't see.
I'm posting this to encourage you, YES YOU, to get out there, try something new and see where it takes you. Whether it's painting, dancing, writing, or any other creative pursuit, don't be afraid to explore your interests and talents. You never know what passion you might discover or what hidden talents may come to light. Embrace the journey of self-discovery and creativity, no matter how old you are.
