Final Food Friday - Greek Yogurt Popsicles!

Here in NC we have really really toasty summers so having a healthy popsicle would be delightful so here is our favorite recipe for those!
1. First, preheat the oven to 400. Place the fruit on a small sheet pan lined with parchment paper or a silicone mat. Drizzle the oil and sugar over the fruit, and toss to combine. Roast for 20-25 minutes, just until the juices oozing from the fruit start to thicken. watch carefully or it will burn. Let cool completely.
2. Next, in a small bowl, stir together the Greek yogurt and 3 tablespoons of agave nectar. Taste, and add the additional tablespoon if you wish.
3. In a popsicle mold, layer pieces of roasted fruit with the yogurt mixture. Follow your popsicle manufacturers directions for freeze times.

Food Friday: Avocado Salsa Cracker

Most of us in our office love all things avocado, guac etc. SO what better snack than avocado, tomato and a cracker?

Here is the most used recipe:
Mash the avocado in a small bowl, then spread mashed avocado on crispbread. Top with salsa. Garnish with cilantro, if desired. The beauty of this is that it can be customized for everyone and what fits your dietary needs!

Food Friday: Cucumber Tomato Salad

One of Dr. Z's favorite summer snacks, appetizers, meals and here are the basic instructions on how to do it:
1. Prepare the tomatoes, cucumber, and parsley: Dice 6 Roma tomatoes. Dice one large English cucumber into small cubes or pieces. Chop a good bunch of parsley, about ¾ bunch. Don’t worry about picking all the leaves, the tender stems near the leaves impart great flavor. Combine everything in a large mixing bowl.
2. Add salt. Season the salad with a good pinch of kosher salt and set aside for about 5 minutes. The vegetables will expel some of their water, which we’ll use to help lightly dress the salad.
3. Add the dressing. The traditional Mediterranean salad dressing here is a good drizzle (about 2 tablespoons) of quality extra virgin olive oil and the juice of one lemon (or at least 2 teaspoons of lemon juice). Add ½ teaspoon freshly grated black pepper and mix to combine.

Taste and serve. Taste the salad and adjust the lemon, salt, and pepper to your liking. Serve immediately, or set aside for 15 minutes to let the flavors get friendly with each other.

FOR JULY we are starting a new series: FOOD FRIDAY

We will be doing Food Friday's featuring health snacks and meals that we love within the office! Today we are featuring one of Kay's newest favorite - Balsamic Watermelon Pizza!

Instructions:
1. Slice the widest part of a round watermelon in half. Lay the flat side down on a cutting board and cut a 1-inch thick slice from each half. Cut each half into 4 wedges.
2. Place them on a round dish like a pizza and top with cheese, olives, balsamic glaze and mint leaves.
