Zaalouk ❤😋
One of most famous moroccan salad of eggplant. Zaalouk means purée. Eggplant caviar and Eggplant salad are quite famous in North Africa, Middle East and South Europe. Among the most popular originally from levantine cuisine and from 🇬🇷.

The most popular popular Zaalouk is prepared with eggplant, tomatoes, garlic, olive oil and cumin.
But there are several adaptations. I like to grill the eggplant and add to the pan diced grilled, red, green yellow pepper and preserved lemon.
Zaalouk is often served as a salad, or it can accompany a tagine. I like also to make pastillas with or serve it as an appetizer as a dip with pita bread, crackers... !
Be careful; It can become an addiction!

Is the Moroccan food healthy?
The rich flavors created by different combinations of spices are what make Moroccan dishes taste delicious and meanwhile nutritious.
Safran from example, is rich in antioxidant. Cinnamon has been proven to reduce the risks of cancer and heart disease. Tumeric and curcumin are very good antioxidants and have anti-inflamatory properties, they help with arthritis and prevent eyes conditions and alzheimer's. Ginger and Cumin regulate the digestive system and are helpful in reducing bloating. Cumin can be found in the tasty zaalouk and most of these spices are found in the Moroccan Tagine and Pastilla.
Every meal is full if proteins and nutrients.
