Made a spice cake with cinnamon icing to remind me of the cinnamon rolls I had been thinking about. I used the Namaste Spice cake mix. The box also has a great recipe for carrot cake printed on the side:)

Gluten free and dairy free banana chocolate chip muffins. I just followed the recipe on the back of my King Arthur gf flour blend and used Enjoy life chocolate chips!
Made this the other day-I halved a gf box of white cake and put it into an 8x8 square pan. Topped with cut strawberries (just enough to cover the top). Made a crumble of white sugar, fake butter, cinnamon and gf flour. Baked it until the top was firm and a toothpick looked like it came out clean) . Cake took a lot longer to bake because of the extra layers. Note: you can use other berries, I just had strawberries on hand.
Gluten free cookies for doomsday prepping didn’t last long
Just made some gluten free/soy free chocolate chip oatmeal cookies. Did have to use a little bit of real butter because I didn’t have enough Earth Balance. They are for a birthday party tonight and they were requested. The group asking for them isn’t even gluten free🥰
Lately I have noticed people (okay, men) telling me that gluten intolerance in food and beverages is not real. It happened a few weeks ago at the horse races with a guy (already on his second beer) who didn’t like that his ex wife had put their child on a gluten free diet so he went online and did “extensive” research to prove her wrong. I finally had to tell him that I was allergic to wheat and then he said, “oh, well, that’s different!” The other incident happened last night at the super bowl party I went to last night. They had sodas, wine, beer and absolute vodka with a bartender manning the table. I was looking for a mixed drink and told him that wheat based vodkas made me sick because of my intolerance. He said that all vodkas were gluten free because of the distillation process. I just reiterated that I can only drink the potato based vodka and that I would pass on the one he had. We had to discuss this for a bit more before he finally stated that I should know my body by now and that since he was Polish he knew all about vodka. Sheesh!
Didn’t get to have any of the lemon cake at my husband’s work party so I made a gf one this week! It was fantastic!
Happy New Year! I was in a detox retreat December 14th and 15th and I have made some progress in a couple of areas! Not eating as much red meat, not eating as many tomatoes (to see if the inflammation in my hands will go down) and not watching as much news tv about politics (gets me angry and frustrated)!
Made some vegan meatballs Monday night using beyond meat, vegan and gf breadcrumbs, vegan cheddar cheese, herbs like basil and Italian seasoning blend and a gf/vegan tomato and artichoke sauce. They came out pretty good and my vegan friends really liked them!
Went in to Walmart today looking for Earth Balance Vegan Puffs (they remind me of Pirate’s B***y) and could not find them. I did, however, find some rice crisps (like a rice crispy) that did not contain malt. I will make rice crispy treats and will report back.
I bought some amazing Schar Petit Biscotto Classico (kind of like a slightly sweet cracker) in the Azores (islands near Portugal) and now find out that they are only in Europe. I wish I had bought more to bring home!
