C’mon Chili’s do better! People have enough guilt around food-even many (most?) people without clinical eating disorders. I mean I get the alliteration but I’m sure there’s a more positive way to frame this menu category.
I’m training for a marathon in April and I don’t love to ride in the cold so it’s been a lot of running—but today in between sessions I got out!! ☀️It was great and I thought of all the things I like more about cycling than running (and I do love running!)

A short list:
🌮being able to eat leftover enchiladas right before and not having to vomit.
⚙️gears.
🚲coasting.
🚛no “feel like a truck hit you” aftermath.
💨tailwind.
🏎️going 40 mph downhill.
🤦♀️One bad thing: realizing you rode with grease all over your face when you drop your greasy chain!

Today’s headlines about women in sport highlight the utter bu****it that women have to deal with. In one sport-they are told to cover up…but in another they cover up and are fined. This is SPORT! This is neither a fashion show nor a beauty pageant. In 2021 to have rules that obligate female athletes to dress in anything other than what allows them to play their best game is unreal. And we wonder why so many women have body image issues? We wonder why so many women suffer from eating disorders?! Rant over!!

Spinach Turkey Burgers are a great way to get some nutrition in and keep the burgers moist!
Ingredients:
* 2 tablespoons olive oil
* 1 medium vidalia onion, chopped (about 1 cup total)
* 1 large butternut squash, peeled and diced into chunks
* 2 large apples ( or 3 medium) peeled, cored and chopped diced
* 3-4 cups chicken stock
* 1 ¼ teaspoon kosher salt
* 1/4 teaspoon fresh grated nutmeg
* ¼ teaspoon black pepper
* ¼ teaspoon cayenne pepper
Directions
In a large pot or Dutch oven cool the olive oil and onions on low heat until translucent, stirring occasionally.
Add cayenne and stir until fragrant
Then add squash, apples, and the stock.
Bring to a boil, then reduce the heat and cover
Cook until the tender (20 to 30 minutes)
Puree the soup with an immersion blender (or transfer to heat proof blender and purée)
Stir in the salt, fresh pepper (to taste) and grated nutmeg.
Top with a dollop of sour cream, croutons, or both!
Nachos with a healthier flavorful twist?
Left over rotisserie chicken, some soon to wilt spinach, an open bag of chips, and lack of any desire to cook inspired this delicious, filling 15 minute nacho dinner with lots of nutrition.
Layer some chips, 3 cups sautéed spinach, a whole can of rinsed beans, chicken, 6 oz asiago cheese, diced Vidalia onion-heat! Then top with grape tomatoes, cilantro, hot peppers (if you dare!) and diced avocado. Add some of your favorite hot sauce and enjoy!
Good food CAN be healthy!
Arugula, pear, fresh Greek feta cubes, walnuts & apple cider vinaigrette.
