Gaucho Style Steak Marinade
1 tsp minced garlic
1 tsp freshly chopped cilantro leaves
2 Tbsp olive oil
2 Tbsp fresh lemon juice
2 Tbsp fresh lime juice
1/2 tsp salt
1 tsp cracked black pepper
1-1/2 lbs skirt steak trimmed
Chimichurri Sauce
1/2 cup olive oil
2 Tbsp red wine vinegar
2 cloves garlic
1 tsp chili flakes
1 Tbsp dried oregano
1 bunch parsley
1 tsp salt
Combine all ingredients, and let the steak marinate, refrigerated, for 1 – 3hrs.
For the chimichurri sauce: Finely mince your parsley and garlic. Mix with remaining ingredients.
Heat grill or pan to high heat, cook skirt steak to medium-rare, let sit for 5 to 10 minutes, then cut on the bias into 1/4 inch pieces, and top with chimichurri sauce.

And if you are unable to attend, might you consider sending in a donation to support the vital work that Civil Eats is doing in covering, uncovering and informing on the food issues of our time? Hope to see you there!!
