Are some proteins healthier than others?
Protein sources can offer a variety of nutrients. When choosing sources, it’s always important to consider the complete composition of the food. For instance, cottage cheese is an excellent protein source; however, it can be high in sodium. Consuming an assortment of foods provides you with the nutrients you need.
Do all protein sources provide the same benefits?
The method for determining the quality of a protein is called the protein digestibility corrected amino acid score (PDCAAS). This score compares a protein’s amino acid quality based on the amino acid requirements of humans and their ability to digest the protein. The highest value a protein can have is 1 and the lowest is 0.
Examples of foods that have a high PDCAAS are:
• eggs
• casein (milk protein)
• soy protein
• whey (milk protein)
• mycoprotein (protein from fungi)
• beef
• soybeans
• chickpeas
• black beans
• legumes
What are the best sources of protein for vegetarians?
Some examples are soy and mycoprotein (Quorn products). Additionally, legumes can be a great source when consumed with a grain such as quinoa or rice. Several of the meals found on our Vegetarian menu feature Quorn products and are a great alternative to soy protein.
When is the ideal time to consume your protein to get the most benefit out of your work out?
It’s beneficial to have a small snack 30-60 minutes prior to working out. This snack should usually be higher in carbohydrates, lower in fat, and low to mid– range amount on protein. Post workout, have a snack within 30 minutes. The snack should be high protein and mid– range carbs to optimize muscle building and repair.
What are some ideal protein sources for building muscle?
Choose high protein sources that are lower in sugar and fat such a Greek yogurt and hummus. When trying to build muscle, the Academy of Nutrition and Dietetics recommends a protein intake ranging from 1.4 to 1.8 grams per kilogram of body weight per day.
How do you choose the right protein source for your work out?
Try to have a combination snack that has both carbs and protein, such as an apple and almonds. If you don’t have time to prepare a healthy snack before or after your workout, it is acceptable to have a protein bar or protein shake. When choosing your bar or shake always read the Nutrition Facts Label.

What is Sugar?
Sugar is a form of carbohydrate. The term sugar is normally used to define monosaccharides and disaccharides.
Monosaccharides include:
• glucose
• galactose
• fructose
Disaccharides include:
• sucrose
• lactose
• maltose
• trehalose
Its main use is to improve flavor of foods and beverages and it is used to alter the functional properties of food, such as providing viscosity, texture, body, and improving browning capacity.
Types of Sugar
There are two types of sugars that we eat, naturally occurring and added sugars.
Naturally occurring sugars:
lactose (found in milk)
fructose (found in fruit)
Added sugars include: sugars and syrups that are added to food during processing or preparation. The main sources of added sugars are soft drinks, cakes, cookies, pies, fruit punch, and candy.
The American Heart Association’s Nutrition Committee states that the average American consumes 400 calories from added sugars each day, the equivalent of 22 teaspoons worth. The USDA suggests that women consume no more than 140 calories and men no more than 260 calories from added sugars each day (calories may vary according to physical activity).
Many of the foods that are high in added sugar have empty calories. Consume these foods sparingly. Regular consumption of these foods can lead to weight gain. When it comes to naturally occurring sugars, try to eat an abundance of fruits and vegetables and low-fat dairy foods even though they contain sugar. These foods are rich in nutrients.
Unfortunately, the Nutrition Facts Label does not differentiate between natural and added sugar. Therefore, it’s important to become a well-informed consumer. It’s essential to always read the ingredients list on a food package.
If the package has any of the following words, then the product has added sugar:
• brown sugar
• corn sweetener
• corn syrup
• dextrose, fructose
• fruit juice concentrate
• glucose
• high-fructose corn syrup
• honey
• invert sugar
• lactose
• maltose
• molasses
• raw sugar
• sucrose
• syrup
• table sugar
- Julia Lott MS, RD, LD
At Fresh N Fit Cuisine, we always account for sugar in our nutrition information and include it in our carbohydrate amounts.

What is clean eating?
Clean eating is sometimes referred to as eating whole foods. Additionally, choosing organic foods when possible can help reassure that foods do not have pesticides, and have been minimally processed.
It involves being mindful of your food’s pathway between its origin and your plate. Fortunately, many restaurants are now sourcing their products locally whenever possible. It's also about eating whole foods minimally/unprocessed, refined, and handled, making them as close to their natural form as possible. Minimally processed foods can be beneficial, because they have had bacteria and toxins removed, an example of this is pasteurized milk.
What are the benefits of clean eating?
Clean eating involves eating a large amount of fruits and vegetables. Consumption of fruits and vegetables can help prevent chronic health conditions such as heart disease, hypertension, and Type 2 diabetes, as well as improve chronic illness. Furthermore, it can help with weight management and improve skin and hair health.
How do you eat clean?
When following a clean diet, you should try choosing foods that are unprocessed. Great examples of these are:
• fresh fruits and vegetables
• dried legumes/nuts
• farm fresh eggs
Minimally processed foods include:
• unrefined grains (pasta, popcorn, whole wheat bread, steel cut oatmeal, quinoa and brown, rice)
• unprocessed meat (choose wild over pastured and pastured over grain fed)
• hormone free dairy
• oils
Make sure to read the Nutrition Facts Label and ingredient list when looking for foods that are minimally processed.
The Paleo diet incorporates some clean eating principles. It consists of only eating foods that our ancestors ate during the Paleolithic era. The difference in the Paleo diet with clean eating is that it restricts all grains, legumes, and dairy products. Therefore, the diet is gluten and dairy free.
A huge benefit to the Paleo diet is that it involves a community. There are tons of Paleo websites, blogs, and newsletters that offer support to follow this lifestyle. Ultimately, being successful in taking on a new lifestyle change requires not only your own will power; but also the support of the people around you.
Consuming foods in their purest form is always most beneficial. This way of life can improve your health and give you more energy. Clean eating accompanied with regular physical activity is when individuals will gain the most value.
Fresh N Fit Cuisine offers a Paleo menu that is perfect to help you make the transition to eating clean simple. Here's some of our favorites on next week's menus so make sure to place your order before our 9am, Friday morning cutoff to get started!

Over the years, many people have adopted a reduced carb diet lifestyle so it would seem that the Low Carb diet is here to stay.
• What's a carbohydrate?
A carbohydrate is a compound composed of carbon, hydrogen, and oxygen, which includes fiber, starches and sugars. Once eaten, the body turns carbohydrates into sugar called glucose. Glucose is then used for energy. If there is any leftover glucose not used up for energy it is stored as fat. A carbohydrate is one of three macronutrients that we eat every day; the other two being fat and protein. In general, these three macronutrients create our total daily calorie intake.
• What does low carbohydrate intake mean and how can it be beneficial to your health?
A low carbohydrate diet can range from 50 to 150 grams a carbohydrate a day. Each individual has different nutrient needs. There has not been a specific value determined to define the amount of carbohydrate grams in a low carb diet. The values can vary due to such things as health status and physical activity.
• What are the benefits to eating a low carb diet?
Many low carb diets are naturally gluten free (gluten is a protein is found in grains, such as wheat, barley, and rye). Additionally, a low carb diet can give a jump start in reaching weight loss goals and it can be beneficial to individuals with nutrition related diseases such as obesity, diabetes and cardiovascular disease.
• Try a variety of healthful non-starchy vegetables
Examples of non-starchy vegetables include spinach, zucchini, asparagus, broccoli, and mushrooms. These vegetables are rich in the fiber, Vitamin C, A, and K. Vitamin C is protects against cell damage; Vitamin A aids in making your immune system stronger and lastly; Vitamin K helps wound healing, bone health and prevents hardening of the arteries.
Fresh N Fit Cuisine offers a Low carb menu that is perfect to quick start a weight loss routine. Make sure to place your order before our 9am, Friday morning cutoff to get started!
