The age old question, how many vanilla beans are in an ounce? Let me preface the answer by saying this is by far the question we get asked the most. If we had a dollar for every time we were asked we'd probably be on a beach somewhere sipping umbrella drinks. But luckily we are here for you and all your vanilla beans needs. So let's get into it...First I will post this little guide for those who want a quick answer for Vanilla Love USA current standards (avg). For more in-depth information, continue down and read below:

Vanilla Beans are a natural product so they vary in weight & length, like pickles, string beans or watermelons. Vanilla Beans can be under 4" or longer than 10", however 90%+ will fall between 4' to 8". Still, that is a pretty big range. Weight-wise, vanilla beans vary even more; a very small bean can weigh as little as .03 ounces (meaning it would take over 33 beans that size to make an ounce!), We have seen very large beans that weigh .28 ounces (meaning only 4 such vanilla beans would weigh well over an ounce)! However most will fall between .05 to .14 ounces.
So what are we getting at? You can order 10 Vanilla Beans from 1 company and 10 from another and get 2 packs of beans that are much different in terms of size. You cannot simply look at the # of beans you are ordering and know what you are getting, you must look at weight as well, or at least length if weight is not given. A pack of 10 Vanilla Beans 5"-7" will be much larger than a pack of 10 Vanilla Beans 4"-6", the difference is significant,
Many companies will sell you 4"-6" beans in the Grade B category, some will even sell 4"-6" beans in the Grade A category! Not at Vanilla Love USA, our Grade B Madagascar type Vanilla Beans are 5"-7" in length and any bean less than .06 ounces we immediately re-classify as Grade C, even if it meets all the other requirements of a Grade B Vanilla Bean. So when you order a Grade B 10 Count of our Madagascar type Beans, you will get 10 Beans 5"-7" in length (avg) and we guarantee a weight range of .90 - 1.1 Ounces (essentially 1 ounce). With other companies you could pay more for 10 Beans of the same grade and end up with 1/2 an ounce.

Easter Cut Out Cookies!
This recipe is for delicious cut out cookies for any season of the year. But with some food coloring and a little swirl you can make these fabulous treats like beautiful Easter Eggs.
For the marbling: Put a drop of food coloring in a bowl of glaze and swirled it a couple times with a wooden skewer, then dipped cookies. Repeated the process until the colors ran together, then started again in a new bowl.

INGREDIENTS: FOR THE COOKIES
(Makes 5 Dozen, 15 minute Prep Time, 15 minute Cook Time)
* 4 cups [568 g] all-purpose flour plus more for dusting
* 1 teaspoon salt
* ¾ teaspoon baking powder
* ¼ teaspoon baking soda
* 1 ½ cups [3 sticks or 339 g] unsalted butter at room temperature
* 3 tablespoons refined coconut oil at room temperature
* 1 ¾ cups [350 g] granulated sugar
* 1 large egg plus 1 large egg yolk at room temperature
* 1 tablespoon pure vanilla extract
INGREDIENTS: FOR THE SIMPLE GLAZE
* 2 cups [240 g] confectioners’ sugar
* 1 tablespoon unsalted butter melted
* 1 teaspoon pure vanilla extract
* Pinch of salt
* 3 to 6 tablespoons [45 to 80 g] water
* Food coloring optional
INGREDIENTS: FOR THE FREEZE-DRIED SUGAR COATING
* 1 cup [200 g] granulated sugar
* 1 to 2 cups [32 to 64 g] freeze-dried berries such as strawberries or raspberries (add more or less depending on how much flavor and vibrant color you want)
INSTRUCTIONS: FOR THE COOKIES
1. In a large bowl, whisk together the flour, salt, baking powder, and baking soda. In the bowl of a stand mixer fitted with a paddle, mix the butter on medium speed until creamy.
2. Add the coconut oil and mix again on medium speed until smooth. Add the granulated sugar and mix again on medium until light and creamy, 3 to 5 minutes. Add the egg, yolk, and vanilla and mix again on low speed until combined. Add the flour mixture and mix on low speed until completely combined. Use a spatula to fold in any dry pieces of dough that may be lingering on the bottom of the bowl. Divide the dough in half; it can be used immediately or wrapped in plastic and refrigerated for up to 4 days (let the dough come to room temperature before rolling).
3. Adjust an oven rack to the middle position and preheat the oven to 350ºF [180ºC]. Line several sheet pans with parchment paper.
4. On a floured surface, roll out the dough somewhere between 1/8 in [4 mm] and ¼ in [6 mm] thick (the thinner the cookie, the crisper it will be, so this will depend on your preference). Use cookie cutters to cut out shapes, then slide a spatula underneath the dough and transfer the shapes to the sheet pans, leaving 1 in [2.5 cm] of space between the cookies. Chill the pans of cookies in the refrigerator for 15 minutes before baking. Dough scraps can be re-rolled and cut out again.
5. Bake the cookies, one pan at a time, until cooked through, 12 to 16 minutes. For a softer cookie, bake for 12 minutes; for a crisper cookie, bake longer, until light golden brown around the edges. Place the baking pans on a wire rack and let the cookies cool completely on the pans before icing. Repeat with the remaining cookies.
INSTRUCTIONS: FOR THE SIMPLE GLAZE
1. Place the confectioners’ sugar in a medium bowl. Add the melted butter, vanilla, salt, and 3 tablespoons of water and stir to combine. Add food coloring, if using. If the mixture is very thick, add 1 tablespoon of water at a time until the desired consistency is reached. Spread the glaze over the cooled cookies. Once the glaze is set, cookies can be stored in an airtight container at room temperature for up to 3 days.
INSTRUCTIONS: FOR THE FREEZE DRIED SUGAR COATING
1. Place the freeze-dried berries and granulated sugar in a food processor, and process until the berries are finely ground and the sugar and berries are combined, about 30 seconds. Sprinkle the tops of the just warm cookies (after baking) with the berry-sugar mixture, gently rubbing it into the surface, and shaking off any excess. The sugar-coated cookies can be stored in an airtight container at room temperature for up to 3 days.

One simple batter turns into a 3 layered cake with a top layer of sponge, a middle layer of custard and a fudge-like base. It's like....magic!
INGREDIENTS
* 4 eggs , yolks and whites separated (at room temperature)
* 3/4 cup (150g) sugar (ordinary or caster sugar)
* 1 tsp vanilla extract (Option: Double Vanilla Extract for more powerful vanilla flavor)
* 1 Vanilla Bean
* 1 stick (4oz / 125g / 1/2 cup) unsalted butter , melted
* 3/4 cup (4oz / 115g) plain all purpose flour
* 2 cups (500 ml / 1 pint) milk (lukewarm) (full fat or low fat but not zero fat)
* Icing sugar (powdered sugar), for dusting
TO SERVE (OPTIONAL)
* Fresh strawberries
* Fruit sauce like raspberry, blueberry or lemon curd
* Whipped cream
* Bourbon butterscotch sauce
* Maple caramel sauce
INSTRUCTIONS
1) Preheat oven to 325F (standard oven / fan forced or convection)
2) Butter a 8" x 8" square cake tin.
3) Beat egg whites with a mixer until stiff peaks form. Set aside.
4) Place the egg yolks and sugar in a bowl and beat until it turns pale yellow - about 1 minute.
5) Add the vanilla extract and butter and beat until well incorporated - about 30 seconds to 1 minute.
6) Slice open the Vanilla Bean lengthwise and scrape the Vanilla Caviar out using the dull side of a knife (apply gentle but firm pressure while scrapping out the insides), place into the bowl
7) Add the flour and beat until just combined.
8 ) Pour the milk in slowly while beating, and beat until well combined (or if using a hand held mixer, add 1/4 milk at a time, beating in between).
9) Use a spatula to fold in the egg whites in the batter, one third at a time, until just incorporated. You don't want to knock the air out of the egg whites. Don't worry if there are a few egg white lumps in the batter. The batter should be very thin, almost like a thick pouring cream.
10) Pour the batter into the prepared cake tin.
BAKING DIRECTIONS
1) Bake until the top is golden brown and the cake does not "jiggle" when you gently shake the tin - around 40 to 50 minutes.
2) Check the cake at 30 minutes - if the top is already golden brown but the cake is not yet set (i.e. it jiggles), cover loosely with foil and return to the oven, 10 minutes at a time, until set.
3) Allow to cool in the tin for 10 minutes, then turn out onto a cooling rack.
4) Cool completely before serving.
TO SERVE
1) Cut into squares - 9 is usual
2) Dust with powdered sugar just before serving.
3) Serve with a side of whipped cream and strawberries, or another suggested option, if desired (but not necessary)

WHAT IS THE BEAN BELT?
Many people ask us if they can plant our product and grow vanilla beans? Unfortunately, the answer is no because the curing process kills the reproductive quality of the beans. But an additional reason is unless you live within the 'Bean Belt' you could not grow Vanilla Beans anyway. The Bean Belt is the part of the earth within 20-25 degrees of the equator. The Bean Belt is where virtually all coffee beans, cacao beans & vanilla beans are grown. This is the only area hot enough (80 degrees or more avg) & humid enough year round to support bean crops.

Vanilla Bean Care
How do I properly handle, care for and store my vanilla beans? Do I clean my vanilla beans when they arrive? How long do vanilla beans last if they are vacuum sealed? How do I know if my vanilla beans have gone bad? What if my beans arrive frozen in the winter?
These are some common questions that people ask. While vanilla is sensitive to environmental changes (heat/cold, humidity/dryness, etc.) it is also naturally durable. Here are a few tips and answers to help you get the most out of every vanilla bean you receive, no matter where you buy it from.
Shipping to Cold Destinations
It isn't uncommon in the winter time to receive your vanilla beans on a cold day. Sometimes they may even arrive frozen. Will that hurt the beans?
While we don't recommend freezing or refrigerating vanilla beans, if your beans arrive frozen, simply keep them in their vacuum-sealed pouch and let them defrost slowly at room temperature. Sometimes they may form a white frost (it can look like powder and is sometimes mistaken for mold) as they thaw. That is normal and that white frost will go away after several minutes to an hour and then your beans are ready for use.
Do I clean my vanilla beans when I receive them?
Generally, the answer is no. The vanilla bean pod is full of vanillin, the naturally-occurring oil that gives vanilla its sweet taste. Through the arduous process of harvesting vanilla beans the bean is heated, bacteria has been killed and the oils sweated out to give the vanilla its sweet aroma and protective coating that keeps bacteria from growing. Rinsing them in water or alcohol will remove some of the oils or dry the pod unnecessarily, especially if they are going into your alcohol immediately to make vanilla extract. However, if you are using the beans for frostings or other applications that do not include cooking or soaking in alcohol, we do recommend giving them a rinse right before use, just as you would with fruits or veggies purchased from the grocery store. Also, in the occasional instance where small imperfections are present, it may make sense to wipe the outside of the bean with a towel dampened with alcohol. (Discussed in more detail below.)
Care and Storage
When you receive your vanilla beans, we recommend that they are used quickly. If you are using the beans to make vanilla extract, it's a good practice to have the spirits and bottles before you buy the beans, so you can put the beans into the spirits immediately upon arrival. Do not remove the beans from their vacuum-sealed pouch until they are ready to be used. Once the pouch is opened, the clock is ticking.
Within their vacuum-sealed pouches, the vanilla beans can be stored for several months in a cool/dry place away from any direct sunlight. We do not recommend storing them in the refrigerator or freezer. We have successfully stored vanilla beans for more than a year in our tests when vacuum sealed properly and stored in a cool/dry place.
Some of our vanilla pros store their vanilla beans in their vanilla extract spirits. By immediately submersing the vanilla beans in alcohol, you not only get the benefit of homemade vanilla extract, but you are also storing your whole beans in the safest possible place, since the alcohol kills and prohibits bacterial growth. Simply toss your new beans into a MOTHER JAR until you are ready to use them for vanilla sugar, vanilla paste or any other culinary treat that calls for whole vanilla beans or vanilla bean caviar.
Remember, your vanilla bean was harvested somewhere within the world's "Bean Belt" where average temperatures are always above 80F and humidity is high. From the bean belt, the beans are packaged and sent all around the world. They have been on a long journey to get to your home, so we always suggest using them quickly.
Always use proper, safe food handling techniques. Cut the beans on a clean surface and wash your hands before and after use.
Has my vanilla gone bad?
A vanilla bean is an organic product and, like any organic product it can go bad. However, given the nature of the tough outer skin of the vanilla bean and the protective, naturally-occurring vanillin oil, it is surprisingly durable and usually salvageable.
Mold can occur as a result of temperature fluctuations and/or the inclusion of excess water or bacteria during the harvesting/drying process. Like any mold, the vanilla-bean mold feeds on oxygen and bacteria as it grows. (This is why we ship our vanilla beans in vacuum-sealed pouches with oxygen removed. It mitigates mold growth in transit.) Unlike molds on breads and cheeses, however, mold on a vanilla bean can often be removed by wiping the bean with a clean towel that has been dampened with vodka or other alcohol with a 35%+ alcohol content. Sometimes, the part of the bean with mold can simply be cut off.
It can often be difficult to distinguish mold from naturally occurring imperfections on the bean pod, or damage caused to the bean pod during harvesting. In addition, one bad bean does not necessarily mean that the entire batch is bad, but the entire batch should be inspected further if one bad bean is found.
Of course, if mold is present and if you are concerned about the quality of the bean, the bean should be discarded.
Finally, at-home extract makers may may notice white fatty-matter appearing on their beans shortly after submersing them in alcohol. It can have the initial appearance of mold, but when you look closely you will see that it is actually the fatty vanillin oils being extracted. They will break down over time. This is typically the sign of a vanillin-rich bean that is sure to be a sweet extract.
If you ever question whether it is fat or mold, simply remove the bean from the bottle and rub the fatty matter between your fingers. Oil will be smooth like butter and will break down easily.
Vanilla bean pod particles may also break down over time, so it isn't uncommon to see specs or "floaties" in your extracts, especially if you sliced or cut your beans before submersing them. This is normal. Some people love the specks, while others choose to pour their extracts through a strainer or coffee filter before use to ensure that it is clear. Either option is great and entirely up to the user.
We personally inspect every single vanilla bean individually before it is shipped to you. We vacuum seal our vanilla beans to remove the oxygen and mitigate the occurrence of mold growth in transit.

HOW TO MAKE VANILLA EXTRACT?
It's easy, rewarding & with a small investment up front, it will save you money in the long-run.
RECIPE FOR 8 oz VANILLA EXTRACT
Items needed:
Vanilla Beans: (Anywhere from 6 - 10 Vanilla Beans (1 oz is about 9-10 Vanilla Beans)
Vodka 75-85 Proof: 8 oz
Bottle: Airtight or Mason Jar (We sell Vanilla Extract Making Kits with everything you need except the alcohol - click on pic for ad listing)
1) Decide how many Vanilla Beans you want to use, 6 on the low end or up to 1 oz on the upper end. Both will make good Vanilla Extract, but with fewer beans you will have to wait longer until it is strong enough to use. With a full ounce you can use after 60 days and it will continue to get stronger, with 6 Beans wait at least 90 days and it will continue to get stronger as well.

2) Take Vanilla Beans and a sharp knife. Place beans on a cutting board and cut lengthwise. Do not cut all the way thru the bean, you just want to cut deep enough so that you open up one side of the bean to expose all those thousands of tiny, flavorful vanilla seeds.
3) Place whole vanilla beans in air-tight bottle, add 8 oz of vodka.
4) Shake vigorously for 1 minute to get your extract started
5) Shake every day for the 1st week
6) After 1st week, shake 2-3 times per week
