Кунжут (от лат. Sesamum – масляное растение) – одно- и многолетнее растение, в стручках которого созревают кунжутные семена. Существует несколько видов семян кунжута: белые, желтые, коричневые и черные. Но чаще всего встречаются два основных вида: белые и черные. Белые применяются в кулинарии для блюд, подвергающихся термической обработке, а черные – наоборот. Именно этот вид более ароматный. Использовать семена кунжута человечество начало очень давно. Его применяли в лечебных целях еще в Древней Греции, Риме, Вавилоне и Китае. Упоминания о кунжутном масле отражены в древнем культурном наследии многих стран, а также в Святом писании. Первым кто описал максимальное количество полезных свойств кунжута и кунжутного масла был Авиценн, который создал огромный труд по врачеванию в 11 в. Сейчас семечки кунжута для экспорта выращивают в Закавказье, Средней Азии, на Дальнем Востоке и в Индии.
