GREEN CURRY STEAK SALAD WITH MANGO SALSA
Serves 6
1 tablespoons plus 2teaspoons lime
Juice
2 tablespoons chopped fresh mint
2 teaspoons green curry paste
1 and 1/2 teaspoons olive oil
1/2 plus 1/8 teaspoon salt
1 and 1/4-pound lean top round steak,trimmed
1 mango,peeled and diced
1 cucumber seeded and diced
1 scallions, thinly sliced
1 large head Bibb lettuce, torn

Steak Fajitas with Grilled Vegetables Salsa
Serve 4
1/4 cup orange juice
4 tablespoons lime juice
2 garlic cloves minced
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoons black pepper
1 pound lean top round steak trimmed
1 large onion,cut into 3/4- inch-thick slices
2 red or green bell pepper quartered
1 large tomato chopped
2 tablespoons chopped fresh cilantro
4 (10-inches) whole wheat flour tortillas,warmed
Lime wedges

SPICY SCRAMBLED EGG TACOS
4 large eggs
4 large eggs whites
1/4 teaspoons salt
1/2 tablespoons canola oil
2 scallions, thinly sliced
1 jalapeno seeded and minced
(6-inch) corn tortillas warmed
2 plum tomatoes chopped
1/2 cup shredded reduced -fact Monterey Jack cheese
1/4 cup chopped fresh cilantro

As summer begins to wind down 😢 we just wanted to give an update on our remaining schedule.

We have a couple more weeks of The Brightside Market farmers market on Thursday evenings. Sept 7th will be our final night at the market…but the market does continue on until the end of September!

We can’t wait for this weekend’s Altoona Palooza!! It’s a jam packed day of mud volleyball 🏐, a bags tournament, a beer 🍺 run mile, camel 🐫 rides, a car 🚗 show and of course….FOOD! We will be there serving up Hawaiian style shave ice 🍧. NesEmil Yum-Yum will be there and I highly recommend their shrimp 🍤 tacos, or chicken 🐓 tacos, or steak tacos….as you can tell they are a family favorite in my house 😉. Lots to do that day so stop out to the Sam Wise Sports Complex and check it all out!!

We will be at the Altoona HyVee one final time on Friday, September 1st from 1-5pm!! HyVee has been so good to us as we started our business this year so stop by and get your Labor Day weekend groceries and a shave ice!!

We have had a great inaugural season! We are so thankful for everyone that has given our shave ice a try, for the repeat customers, for the many compliments, and most importantly, the people we have met along the way! Iowa Nice is a real thing y’all!

We can’t wait for 2024 and look forward to seeing you out there in the Des Moines metro areas! We are available for grad parties, town events/celebrations, sporting events, etc. so reach out early and get us booked for your 2024 events!!!
