💚 time for some local love!!!

It’s been a little while since we visited the farm at – one of our fabulous local greens providers, just down the road from us – so we thought we’d pop over and catch up with our good food friends to catch up, walk the grounds, and tour the farm. Our visit was brief, but during our walk, owner Greg Willerer shared insights into their recent work. To dive deeper, we followed up with Greg to chat about their farming practices, the challenges they’ve faced, and the innovations they’re excited about. Not only do we love supporting local farms for obvious reasons, but we’re also invested in our partner farms and are always eager to learn and share knowledge with our community.

Here’s a snippet from our conversation:

Q: How have recent climate changes impacted your farming practices?
A: Climate change has posed significant challenges, but we’ve adapted by protecting our crops from extreme weather. We’ve turned to black shade tarps to shield our produce from heavy rain and intense heat. Our no-till farming approach, which builds up the soil as a massive sponge, helps us better withstand extreme conditions compared to traditional chemical-based farming, resulting in better nutrient absorption, reduced water run-off, and less dust.

Q: What strategies are you implementing to address climate challenges?
A: Our no-till method helps maintain soil structure and health by reducing disturbance, which supports long-term productivity and resilience. We also use other practices, like adding organic matter back into the soil, to ensure it remains nutrient-rich. We’re also excited to start planting pine trees on the edge of the farm to create a windbreak. This time-tested method will not only protect our crops from wind damage but also helps to offset a bit of carbon (every tree helps!). Beyond our farm, we’re helping others build farms and gardens – offering a more affordable option than traditional “landscaping services”.

Q: What challenges have you faced this year, and what keeps you motivated?
A: W**d management remains a constant battle, especially with overgrown urban areas nearby. Pests are another challenge, but we've embraced companion planting as a solution. For example, by planting endive with arugula, we create geographic and scent confusion that helps deter pests. The challenge of finding innovative growing strategies is part of what makes farming so rewarding—it's a bit like teaching, where every season brings new lessons.

Q: What exciting changes are coming to Brother Nature Produce?
A: We’re looking forward to expanding our radicchio production! By utilizing companion planting, we're not just preventing pests but also growing more efficiently in the same space. Radicchio is beautiful and challenging – taking up to 70 days to mature, but the result is worth it— these vibrant, distinctive, bocce ball-sized plants in maroon and green swirls will be ready this fall.

Q: Any advice for aspiring local, organic farmers?
A: Remember, you're part of a community – growing alongside others trying to make a living, whether you're farming in the city or the countryside. Urban farming, in particular, offers incredible opportunities—it’s a potential solution to issues like crime, climate change, and economic injustice. By growing in your neighborhood, you're contributing to safer streets, cleaner environments, and more sustainable livelihoods.

Since 2022, Slow Food has been the global giving partner for Negroni Week, a fundraiser by Imbibe and Campari. Funds raised by bars and restaurants support networks and programs that build community, equity, and justice through food and beverage. This year, I was honored to represent the Slow Food Negroni Week cohort at Tales of the Cocktail.

When we first got our liquor license at Folk, we hand-juiced our cocktails, believing it was better for our customers and the environment. However, this approach proved challenging, impacting time, logistics, and storage. With a focus on quality, including coffee and tea, we realized maintaining the cocktail program was too demanding during COVID. Plus, we LOVE WINE! So, we shifted focus to wine and re-evaluated our beverage approach.

Over the past four years, Folk has intensified its focus on wine sourcing and curation. Our deep love for wine was just the start. When we dove deeper, we asked ourselves “the why” beyond passion. The answer was clear: we value wines from producers who care for people and places, aligning with our food philosophy.
Finding our groove in the wine world took time (what a world it is!). There’s always more to learn. For example, while some wines might remind you of sour kombucha, we’ve discovered refined, smooth bio-wines worth exploring.

Earlier this year, we were thrilled to receive a James Beard nomination for Outstanding Beverage. It’s a huge honor to be recognized by peers and the community! We never imagined our small spot, focusing on biodynamic wines from like-minded producers, would achieve such recognition.

We’ve used this opportunity to build connections and community. As our circle, including ourselves and loved ones, shifts toward healthier beverage choices—whether low or no ABV or supporting sustainable practices—I attended to explore the global beverage scene. I connected with and to discuss sustainable practices and wellness in beverage service.

Bethany’s artistic vision and work is irremovable from her vision for her community. She is an active organizer in her Tribal nations and is passionate about using fashion as a tool to uplift Women and young girls, and to support MMIWG preventative resources.

Our Story

FOLK is a neighborhood restaurant featuring an all-day brunch menu, full espresso bar & craft ice-cream counter. The menu offers seasonally focused globally-inspired yet familiar comfort foods created with the highest quality nutrient-packed, locally and ethically-sourced ingredients.

We are able to reserve seating during normal business hours for parties of 6-12 people, offer a variety of seasonally inspired catered menu options and offer our beautiful dining space for intimate private event rental.
