When the jam is almost, but not quite empty….

Jam salad dressing

1 tablespoon(ish) jam
2 teaspoons Dijon mustard
2 tablespoons white wine vinegar
1/4 cup olive oil
Salt and pepper to taste

Shake it all together right in the jam jar.

Biscuits

3 1/2 cups flour
1 tablespoon sugar
2 tablespoon baking powder
1 teaspoon salt
12 tablespoons unsalted butter, cut into small pieces
1 1/2 cups buttermilk

Preheat oven to 450F.

Mix together flour, sugar, baking powder, and salt. Using a pastry cutter, cut the butter into the flour mixture until it looks like a coarse meal. You can use your fingers at the last to smear the final chunks into the flour mixture.

Using a fork, stir in the buttermilk, bringing the mixture together to form a shaggy dough.

Turn the dough onto a board, continuing to bring it together. Using a rolling pin or even your hands, press into a thick layer. Again, shaggy is good. Use a biscuit cutter to cut into rounds.

Place on a baking sheet, somewhat close together. Bake 12-14 minutes.

The beach plums decided they wanted to be regular beach plum jam and beach plum lavender jam. The remaining beach plums may have other flavor aspirations. We’ll see.
