More protein-packed goodness to help boost your protein goals: try these and let me know how you like them!
Protein goals can feel insurmountable, but there are so many good ways to get there! Here are some combos that you can easily throw together or take on the road that will make it easy to boost your protein intake.
RECIPE!! This was SO easy to make and packed with good protein.
Start with a cast iron pan (or ceramic frying pan) at medium heat, spray with 100% avocado oil spray (ghee or coconut oil is fine too!)
Spray chicken thigh / thinly coat with oil and sprinkle with The Blend (by Kinders).
Cook and flip until internal temp is 165° for nice juicy chicken thighs. Then remove from the pan.
While cooking chicken, chop
- 1/2 white onion
- 6 shiitake mushrooms into slices
- bok choy leaves from 1 bok choy
Re-spray and sauté until slightly transparent, then season with The Blend and continue to sauté until transparent and soft
Add the chicken back in and add a Thai Peanut Butter sauce to the chicken and veggie mixture.
Cook on simmer to reduce the sauce for ~5 minutes
Dish and garnish with cilantro leaves and bean sprouts.
