When you are ready to Order you send a text to the Group Text and we respond "Confirmed". Seafood is caught and is upon availability. So if there is an issue with what you are ordering we will let you know and we can adjust the order for you. The only other thing that could be a problem is that when the Seafood comes in, if there is a problem with Quality and/or Freshness, I guarantee that we will opt out of purchasing any product that doesn't meet our high standard of Quality Control Inspection. The issue here is that all of this happens at the Airport or in Receiving at the Fulton Fish Market and happens between 1 am and 4 am. We have NO way of letting you know at that time. It's always best to have a SECOND CHOICE when placing an order. If there is NO SECOND CHOICE then that Seafood Item will be left out of your Order. Historically, we haven't had any problems, but In the event of a problem we will work with you to make any corrections. Seafood is not an EXACT SCIENCE. All of our FISH are CUT to ORDER. Sometimes it is a little over. For example: If you ordered a pound of fluke, when I Fillet the Fish it could be from 3/4 of a pound to 1 1/2 pounds. There is NO WAY to absolutely gauge what weight the FILLET of the fish will provide. So as you can see it is not an exact science. It's not like going to your local market. A quick education on FRESH FISH. Fish Markets and Super Markets buy commercial grade fish in bulk. This fish is caught and usually is on the boat for a minimum of a week or longer depending on the boat. Then it goes to a sorting house where it is sorted by size and boxed. This is an industry wide standard. Even though it is still good it is not the same. All of our FRESH FISH is caught using SUSTAINABLE FISHING PRACTICES and usually brought to your home with-in 36 hours of being caught. This gives you, the consumer, the FRESHEST FISH there is. With the true flavor of fish. Since Covid hit we have been supplying a very small group of people with our seafood products and they absolutely love the Quality, Freshness, and the level of our service.
