Chef Michael Diaz de Leon is a first generation Mexican-American born on the border of Mรฉxico and the United States in the culturally rich city of El Paso, Texas. He has spent most of his life in the duality that exists in being raised in a border town and has always had an affinity for connection and community through food. In El Paso he was the opening CDC for Taft Diaz before his departure to Denver Colorado.

Formerly of BRUTร˜ in Downtown Denver - an 18 seat chef counter offering an omakase tasting menu of seasonal & core ingredients that encourages little to no waste, while flavor remains essential with influences from traditional ingredients grown and found around Latin America, Mรฉxico, Texas and Colorado.

Currently embarking on a journey of exploration and collaboration. A new pop up dinner experience will share space at the table through food & wine. Collaboration dinners and creation will be at the forefront of this new venture.

Chef Michael Diaz de Leon has been awarded the San Pellegrino Starchefs Game Changer Award in 2022. In 2023, Chef was also a James Beard Foundation Finalist for Best Chef Mountain States and was the recipient of the Michelin Guides Green Star and 1 star.

Wow! Today marks the 3-year anniversary of us first opening up the taco window to the Borderland! When we began this project,( 2 years before we opened), and finally opened our doors in the middle of a pandemic, we never could have imagined the support and love we would receive from the amazing El Paso / Juรกrez community. One of our cold weather favorites is back! Our Sopa Azteca is now available by the cup or bowl. Our tortilla soup is made using fresh tomato, dried pasilla, guajillo, and our fresh ground heirloom maize. Topped with cotija, cilantro oil, avocado, and tortilla strips this soup is vegetarian (vegan without cheese) get it now while it lasts!

Itโ€™s Chile en Nogada season! In honor of the transition into the fall season we are offering out take on the classic dish; in taco form. Our Taco en Nogada is a roasted poblano chile, filled with ground beef, peaches, apples, pears, raisins, and deez. Topped with a pecan crema with queso fresco and pomegranate seeds. In honor of 16 de septiembre we are extremely proud to be partnering with to offer a sustainable shopping bag solution made by an all-female sewing co-op in Ciudad Juรกrez. The Market Tote is made from recycled plastic bottles and a portion of sales go to help stop violence against women in Mรฉxico. In addition to this is donating all proceeds to help with the continued effort to stop violence against women in Juรกrez.
